Last fall, I received an email with a fun, interesting assignment; create a chocolate chip cookie recipe. Oh, but not just any chocolate chip recipe .......... rather, one that would WOW with the first bite. Oh, and there were a few other stipulations. It would be great if this cookie could be made with whole wheat flour and oh, by the way .......... some of the fat should be replaced with healthy avocados. It was the California Avocado Commission writing, so of course, the cookies would need to include avocado. This was definitely a challenge: to create a fabulous recipe for California Avocado Chocolate Chip Cookies, but as I said, a fun one for this "little mad scientist in the kitchen" (that's what my husband calls me). There was an imminent deadline, so I got right to work. I bought lots of avocados, a big bag of whole wheat flour and the other ingredients I thought I'd need. Before long, my kitchen looked like a research project (truthfully, probably more like a bomb detonation scene) with ingredients scattered here, there and everywhere and me having a fine dusting of flour down the front .......... but I was in my element, California Avocado Chocolate Chip Cookies were in the making!
I tested, tweaked and tried this idea and that one. The first couple batches I made were good, but not great. With the whole wheat flour they were a little dense and fairly heavy. Not exactly what I had in mind. I decided to try a combination of flours and picked up a bag of white whole wheat flour. What is white whole wheat flour? It's the same as regular whole wheat flour, but it's made from white (also called albino) wheat. It's color is similar to all-purpose flour, yet it has all the nutritional value of whole wheat. Cool, huh? I thought so too. I played around with the recipe for a while and came up with what we thought was a real winner. It was confirmed the following day. Some friends of ours stopped by that morning after we finished the photo shoot of the cookies. They didn't know we were shooting chocolate chip cookies that day and had stopped at a favorite bakery and purchased, of all things, a bag of fresh chocolate chip cookies!! We were loaded and ready ..... !
We enjoyed lunch together and, after the meal, I placed a plate of cookies (both kinds) on the table. We decided to do a taste test and guess what? California Avocado Chocolate Chip Cookies won, unanimously!!! No one could believe they were made with avocados, it shocked everyone. I'm one of those people who are quite picky about my chocolate chip cookies, but I have to say, these are on my list of favorites!
