We're sort of taking a little veer today from the French recipes and the France-inspired posts we've been sharing, to honor a special holiday that originates in Mexico, Cinco de Mayo. Not too much of a veer though - as this celebratory day, believe it or not, actually has a French connection...
Cinco de Mayo (Spanish for the fifth of May) is often thought of as Mexico's independence day, but in reality, it commemorates the Mexican army's unlikely victory over French forces at the Battle of Puebla on May 5, 1862. Cinco de Mayo has always been a special holiday for Mexican-Americans, but it's gained popularity all across the United States and beyond in recent years. Traditions include parades, mariachi music performances and street festivals. And although, to me, any day is a perfect day to enjoy Mexican cuisine, on the fifth of May, it's not even legal to eat anything other than South of the Border cuisine.
You didn't know that? Okay, okay, maybe it's not actually against the law, but it's definitely reason for someone to call you a party pooper. I thought I'd save you from that undesirable moniker by sharing a few of our favorite Mexican-inspired recipes. Ready?
Best Ever, Super Easy Salsa - Loaded with delicious South of the Border flavor, this fresh, vibrant salsa comes together in less than 10 minutes.
Huevos Rancheros - a healthy and super-delicious take on this classic Southwestern dish, featuring sweet, tender corn, tomatoes and avocados.
Mexican Chopped Salad - it honestly doesn't get much fresher or more delicious than this salad. Mexican entrees can sometimes be a little heavy and this beautiful salad is a really nice way to lighten things up and add lots of healthy veggies.
Oh, and while we're in a South of the Border frame of mind, I've been eyeing up some delicious looking recipes from some of my favorite bloggers too, everything from breakfast to lunch, dinner - even appetizers and dessert!
Cinco de Mayo Popsicles - how fun and pretty are these? And the flavors in each layer are super delicious - check these guys out!
Warm Pretzel Rolls with Mexican Cheese Dip - I can only imagine how fast this beautiful dish would disappear at a party or get together!
Pineapple Salsa - this looks so good to me, I'm sure I would eat it by the bowlful - you probably should arrive at the party before I get there!
Baked Mexican Eggs - these delicious little individual size servings would be perfect for a breakfast or brunch get-together.
Slow-Cooker Spicy Pork Pineapple Tacos - if slow cooked pork is on the menu at a Mexican restaurant, I'm all over it. It's even better to have a stash of your own at home!
Pickled Red Onions - we'll finish up this round up with one of the easiest, most fun and definitely most versatile recipes in my collection. These beautifully-hued red onions are delightful on any type of Mexican entree, but they also add a vibrant, delicious touch to salads and appetizers. I keep a jar in my fridge at all times. They take less than 10 minutes to make though so it's easy to whip them up anytime.

WOW! What a marvelous feast. I live in the heart of the San Fernando Valley in Southern California, an area that is densely populated by immigrants from all of the states of Mexico and every country in both Central and South America.. We are a veritable melting pot, and we certainly have some terrific food. Cinco de Mayo is cause for great celebration here. Thanks for the early start!

I think the only people to celebrate Cinco de Mayo would be a few food bloggers and the occasional Mexican restaurant but there aren't many of those. I remember what a big day it was foodwise when I lived in the states. ALL of these dishes are amazing and I want to eat each one.

I've had a ball checking all these out! Especially the soup and the pineapple salsa. And they are all SO pretty! I love anything with an egg on it, but not Huevos Rancheros. BUT it is one of Phil's all time favorite dishes! I may have to take another looks and try to make them for him.
