Chilled Berries with White Hot Chocolate Sauce

Hope all of our U.S. friends have had a wonderful Fourth of July holiday weekend. We’re sharing one last, fun recipe from our Café archives. We thought you’d love this one because it’s about as simple to put together as they come ……… while being super elegant at the same time .

I discovered this delightful recipe last summer and couldn’t get over that something so easy could be so fabulous! It’s from one of London’s most famous restaurants and it seems that it’s delicious fame has spread all over the world. Of course it doesn’t hurt that Ina Garten is crazy about it and published the recipe in her cookbook Barefoot Contessa at Home.

This is one to tuck away in your secret bag of magic tricks …………. pull it out when you need a fabulous dessert in a hurry or when those unexpected guests walk in the door with a sweet tooth a mile long! I have a few of those that show up at my house, and the funny thing is, their last name is the same as mine ……….

P.S. We’ll be back on Monday with a fun new recipe, see you then!!! Oh, and if you’re wondering which London restaurant this legendary dessert hails from, you can read all about it here.

Chilled Berries w/ White Hot Chocolate Sauce

Ingredients:
4-6 cups fresh berries, I like to use a combination of raspberries, strawberries, blueberries and blackberries
6-7 ounces good quality white chocolate, chopped (I use Ghiradelli or Lindt)
1 cup heavy cream
1 teaspoon vanilla

Directions:
1. At least 60-90 minutes before serving time, spread the berries on a baking sheet and place in the freezer.

2.While berries are freezing, place cream in a medium size microwave-safe bowl. Microwave on high for 1-2 minutes or until cream just begins to bubble around the edges. Remove from microwave and immediately add white chocolate. Cover with a piece of plastic wrap and alllow to sit for several minutes then stir well until all chocolate is melted and sauce is smooth. Set aside, covered until serving time.

3.When ready to serve, divide berries among 4 dessert plates or 4 pretty bowls. Re-heat white chocolate sauce for 40-50 seconds. Drizzle sauce generously over berries. Serve with a mint sprig for garnish.

Serves 4
