5 Fabulous Fall Salads

Five Fabulous Fall Salads - these are our favorite healthy and super delicious recipes for the autumn season.

The Café has been on the road for the past ten days visiting family and friends. We’re home again and, back”in the saddle”; for me, that means back in the kitchen. I’m having fun creating new recipes inspired by our travels and the season.

We spent time with two of my sisters and a dear friend, all three of them fabulous cooks. We also ate lots of really fun meals out and, to put it in a nutshell, overindulged just a wee bit. I came home feeling like it was definitely time to behave again and started pulling out some of our recipes for favorite fall salads. I thought you might be in the same boat; looking for some healthy, lean and delicious recipes.

Roasted Butternut Salad with Barley and Candied Bacon –  I’ve gotten emails from people all over the place who have fallen in love with this salad. I think everyone loves it because it’s loaded with really healthy ingredients, but has a unbelievably delicious splurge with – are you ready? Candied bacon! (This salad is also pictured at the beginning of this post.)

Shaved Brussels Sprout Apple Salad - It might be the warm cider and bacon dressing that takes it over the top but this salad has been a fabulous winner with everyone who's tried it.

Shaved Brussels Sprouts and Apple Salad with Cider Vinaigrette – This one seems to scream “fall”. If you think you don’t like Brussels sprouts, I have a feeling you’ll change your mind after taking one bite of this delicious salad. My brother-in-law can’t stand the thought of them. My sister and I made this salad and he happily gobbled it up – after dinner we told him it was shaved Brussels sprouts and he couldn’t believe it! It might be the cider and bacon dressing that takes it over the top, but this salad has been a fabulous winner with everyone who’s tried it.

Massaged Kale and Butternut Squash Salad with Warm Apple Cider Dressing - I didn't think I like kale in salads till I tried this simple "massaging" technique. Now they're on our menu quite frequently. This one's a favorite - It's so pretty and so tasty!

Massaged Kale and Butternut Squash Salad with Warm Apple Cider Dressing – I didn’t think I liked kale in salads, till I tried this simple technique. I thought it was too “chewy” or something … Now I’ve totally changed my mind, and kale is on our menu quite frequently. This one’s a favorite with roasted butternut squash, pomegranate arils and bacon. It’s so pretty and so tasty!

Of course Scott had his camera on his shoulder at all times during our trip, which included Chicago, southeastern Wisconsin and Nashville.  Here are a few highlights through his lens.

Marlene's View
We flew in Chicago, picked up our rental car and drove to southeastern Wisconsin where my sister, Marlene lives. Her home is on a beautiful lake and the views are just breathtaking!

Cooking with Marlene
Marlene and I always have fun cooking together. She has a prizewinning meatloaf recipe that we made for dinner one night. (She really did win first prize in a meatloaf contest a number of years ago!)

Marlene's table
Marlene always sets a beautiful table. One of days we were visiting she made a wonderful lunch and invited some favorite aunts and cousins. It was so fun to be together with them!

Wisconsin Countryside
Scott and I both grew up in Wisconsin, so the beautiful countryside brings lots of nostalgia.

Chicago El
Next stop was back to Chicago where we had a wonderful two days with another sister, Annie, and her husband. We enjoyed fabulous food (Annie is an amazing cook) and had a blast riding the “L” (the overground rapid transit system), the buses and wandering the streets of Chicago.

Annie and Chris
There’s nothing like being with a sister, no matter what you’re doing.

We can get in a bit of trouble together – now you see why I had to pull out the salad recipes when we got home!

Billy Goat Tavern
A “must” anytime we’re in downtown Chicago is the world-famous Billy Goat Tavern. They start selling hamburgers at 6 in the morning and are open till the wee hours. No matter what time of day, there’s always a line We had a chance to sit and chat with the owner and his son who are friends of my sister and her husband. Check out their fun website for the whole story – billygoattavern.com

Chicago
We took The Architectural Boat Tour in Chicago; what a beautiful and historic city! If you ever have the opportunity to go to Chicago, this is an amazing way to see the city.

Grand Ole Opry (1)

Grand Ole Opry
Next stop was Nashville, where we spend a few days visiting with dear friends. They treated us like royalty and we thoroughly enjoyed our time with them including seeing some quintessential Nashville sites like the Ryman Theater, the original home of The Grand Ole Opry.

It was a wonderful trip, but a bit of a whirlwind. We were so happy to sleep in our own bed,  get back into a routine – and a healthier diet. These Fall Salads will help. Hope you enjoy them!
