It seems like I never learn. I always worry that I might not have enough for everyone to eat when I entertain. Consequently, I tend to make way more than what we actually need. Is there anyone out there who can identify?

I roasted two turkey breasts this year for Thanksgiving in lieu of a whole bird, as everyone in the family seems to prefers white meat to legs and thighs. I probably could have gotten away with just one, but not me. Oh no, I wanted to make certain there was plenty.

This morning I started thinking about what to do with all of that tasty meat sitting in the fridge…

I don’t know about you, but one leftover Thanksgiving meal and perhaps a sandwich or two, and I’m about done with turkey. Ready to say “adiós” till next year around this time.

Unless of course, it’s reinvented in a whole new, incredibly delicious way.

That’s why I’m popping in today, to share a favorite recipe, my Turkey Pasta Soup. It’s actually a soup I make almost all year long, substituting chicken when I don’t have turkey leftovers. It never fails to please, and both young and old alike gobble up huge bowlfuls. My husband, Scott says it’s his favorite soup, ever!

This recipe makes a big pot, but it’s a great soup to have on hand for the busy pre-Christmas days ahead. It’s also a wonderful meal to share, if you have a friend, neighbor or family member who could use a comforting meal. Add a simple salad and a loaf of rustic bread, and you have a lunch or casual dinner that will be universally enjoyed.

I love that this Turkey Pasta Soup is healthy and low fat. There’s shallots, celery and lots of sweet carrots. I use my handy dandy chopper to make short work of the veggies. It’s one of my favorite little kitchen gadgets, saving me lots of time and making it a breeze to throw together a pot of soup like this. The uniform shape and size of the veggies gives a really pretty presentation too.
