Fall is almost here! Although we're having a little warm spell, the trees here are beginning to turn red and yellow. One of our favorite things about the changing seasons is welcoming new flavors and ingredients. A salad is a fresh, delicious way to showcase fall produce and flavors. Any of these salads would pair perfectly with chicken, pork, steak or seafood and you have a complete meal. Enjoy!

Is there such a thing as a salad emergency???? I was asked to bring the salad to a dinner in two days - dinner is kielbasa. I'm sure it will be served with rolls and sauerkraut. Chris, I immediately turned to your blog because I have made (and loved) so many of your salads and dressings. What do you think would pair with kielbasa? I'm thinking Black Bean Sweet Potato from this post. Something hardy to stand up to the entree. Any suggestions?

Thank you for your input! Three good choices. I have your Pumpkin Maple Vinaigrette on my counter because I served it last weekend on a salad I threw together. Of course, everyone loved the dressing - you are never miss! I am going to pour over these choices and get working on it. Everyone seems to love a salad with pomegranates and something orange at this time of year - so festive! Candied bacon has got to always be a hit. I'll let you know how this goes. THANK YOU!

Your salad was the hit of the dinner and, fortunately, my friend is a very generous hostess who wasn't at all bothered that the side I brought was getting all the attention. I made your candied bacon, toasted walnuts and maple dijon vinaigrette. I actually made the barley, but then didn't use it because I remembered someone couldn't eat gluten. I made your caramelized sweet potatoes. Put everything together with mostly romaine and some spring mix, pomegranate seeds and feta cheese. When I went to get seconds, it was gone! Thank you for making me look like a star! I'm sharing your recipes and website with everyone who was there. I think the candied bacon put everything over the top and it was SO EASY to make. Cannot thank you enough!

Hi Sheryl, I'm so happy you have enjoyed both the pumpkin dressing and the butternut soup. Thanks for sharing your results. If you wanted the soup a little thicker you could add cornstarch or just cut back on the amount of broth in the recipe. Or you could just simmer it a little longer.
