A delicious selection of our favorite fall salads for your autumn menus, all bursting with fresh, healthy, seasonal ingredients!
If you're like me, you're starting to see glimpses of fall produce at the farmer's market and grocery store. Each time I go, it seems there's something new. I've been picking up butternut and acorn squash, sweet potatoes, pears and early season apples. All these wonderful autumn specialties have got me thinking about new recipes. I have tons of ideas for fun fall posts, but I thought that I'd get you in the mood too, by sharing some of our favorite fall salads.
I love that salads can be a beginning, a side or the whole meal. Many of these selections pair nicely with grilled, roasted or pan-seared entrees. They're perfect for weekday lunches or dinners but are also impressive for entertaining. I know you'll be sure to find something here that strikes your fancy!
Arugula Roasted Grape Salad - delicious and healthy! It makes a wonderful side or a fabulous main dish served with chicken, shrimp or salmon.
Pomegranate Parsley Couscous Salad - This colorful and delicious salad is super easy to prepare and it’s the perfect healthy side dish for everyday or special occasions!
Asian Glazed Salmon Salad - It's both delicious and beautiful! And it makes a fabulous dinner party entree!
I've gotten emails from people all over the place who have fallen in love with this Roasted Butternut Salad with Barley and Candied Bacon. I think everyone loves it because it's loaded with really healthy ingredients, but has an unbelievably delicious splurge - check it out!
Arugula, Pomegranate and Pear Salad - perfect for fall with pears, poms, red grapes and a delicious poppy seed apple cider dressing.

Can you suggest how I could incorporate chicken into your arugula pomegranite salad to serve as luncheon entre?

Hi Sharon, I would use grilled chicken or this Restaurant-Style chicken recipe: https://thecafesucrefarine.com/restaurant-style-sauteed-chicken-breasts/
I would slice the chicken and fan the slices out on one slide of the plate and serve the salad on the other.
You could also shred some rotisserie chicken and pile it up in the center of the salad.

I have to say that this is the most gorgeous group of salads I've seen in a long time! These would be perfect on my dinner table. The hard part is deciding which one first. I do love that pear and pomegranate though!
