You might not be aware of this, but besides being the beginning of the lovely summer season, June is also California Avocado Month! The harvest is in full swing right now and it’s the peak of the avocado season.
Guess what? Scott and I just happen to be visiting California and have had the amazing opportunity to visit a beautiful avocado ranch in Southern California a few days ago.
Prior to this, we didn’t have a clue about the ins and outs of growing avocados. We learned so much from the grove tour, especially the TLC that’s involved here in California with every tree, it was very impressive! It caused us to fall, even more, in love with avocados. So, in honor of this special celebratory month, we’d thought we’d share Five Fabulous Avocado Recipes; some of our all-time favorites!
Stuffed Bell Peppers with California Avocados and Barley A perfect meal for summer. Serve it on it’s own or with chicken, shrimp, pork or beef. It’s a beautiful presentation, loaded with great flavor and sure to please!
Pineapple, Avocado and Fresh Corn Salsa This is amazing with chips as a snack or appetizer and it also makes a wonderful topping for grilled entrees.
California Avocado Chocolate Cookies These are amazing, actually, some of the best chocolate chip cookies in my CCC arsenal (which, btw is quite huge!).
Tomato, Avocado and Fresh Mozzarella Tartines. This has to be one of our very favorite summer meals. It’s not only delicious, but just gorgeous too!
