Five Favorite Winter Comfort Soups

Five Fabulous Winter Comfort Soups - all of these are meals-in-a-bowl, super healthy and can be made ahead.

To be perfectly honest, I had a totally different post planned for today. A really fun and delicious new recipe but, it’s just not quite ready yet. It’s lovely to look at and tastes great, but there’s one thing that’s just not right so… I’m going to work on it a bit more. It’s coming, I promise, I just don’t like to share with you till it’s perfect.

Since it’s gray, rainy and downright miserable here in North Carolina, with forecasts of ice and freezing rain later today, I decided that it was a perfect day for comfort food. And to me, nothing says “comfort” more than steaming bowls of hearty, delicious soup. Here are Five Winter Comfort Soups to add to your culinary arsenal. Each one is a complete “meal in a bowl”, can be made ahead and is loaded with fresh, healthy ingredients.

Chicken Tortilla Soup - oh man, this is one of our favorite soups of all time. We gobble up a pot of this in no time flat! But that's okay cause it's super healthy and loaded with good stuff!

Chicken Tortilla Soup – the first time I made this soup, my husband asked for so many re-fills, I couldn’t believe it. Your family will too! It’s so flavorful and full of nutritious fresh veggies.

Lasagna Soup - all the flavor of traditional lasagna with half of the work!. My husband said it's the best soup he's ever had!

Lasagna Soup – all the flavor of lasagna with a fun new twist – served in a bowl! Everyone seems to go crazy over this one.

Beef Bourguignon Soup - a delicious meal in a bowl loaded with melt in your mouth beef and fresh veggies.

Beef  Bourguignon Soup French classic in brand new clothes, soup clothes! Julia would have loved this one!

African Peanut Soup - if you're looking for fun, unique and crazy-delicious, this soup ticks all the boxes!

African Peanut Soup with Roast Chicken – If you’re looking for something unique, crazy-delicious and super healthy this soup ticks all the boxes!

Chicken Pasta Soup - the ultimate "comfort" soup. I haven't met a soul who doesn't love it. Just be sure to make enough! My pot is always empty before I can blink!

Chicken Pasta Soup – I originally posted this as Turkey Pasta Soup, as it was just after Thanksgiving, but most of the time I make it with leftover chicken or rotisserie chicken. It’s perfect for a family dinner as it appeals to all ages. I also like to make it for friends who are sick or maybe just need a bit of cheering up. If soup could speak, I think this one would say, “I love you!”.

So don’t worry if the cold winds blow, the snow falls or ice covers the trees, sidewalks and roadways. Stay tucked inside with a big pot of one of these delicious comfort soups, invite the neighbors and have a winter party!

  • Dear Chris…. I stumbled on your website and was very intrigued by your recipe for propagating basil. I have to tell you when I saw the picture of you and your husband and read your story, it brought tears to my eyes. My husband and I shared that similar life together. We were in the garden every day together. We have 2 acres and it is one big beautiful garden. That was our passion. I just lost my best friend to Brain cancer (GBM). We were married 43 years.. I just can’t imagine being in the garden without him or living without him beside me.. All this to say, Chris you have brought a little sunshine into my life every day when I read your blogs. Cooking is another passion of mine. My David was my greatest critic. He loved to eat. May God bless you and your husband with health and happiness. Thank you again for your wonderful stories and delicious recipes.

  • Perfect timing to offer up your fabulous collection of soup recipes, Chris! As for those recipes needing that extra tweak? That’s recipe development for ya. Paleo baking keeps me very busy…lots of testing! Try not to stress. It will come together! Thanks for sharing and keep warm! 🙂

  • All of your soups look delicious Chris. I will definitely be trying them, especially the Beef Bourg. It is even cold here in Florida. We left NC on Jan 8th with 7 degree temperatures. Still sounds like it is blustery. I know what you mean about not posting a recipe until it is to your liking. I have many recipes that never made it to the blog. Keep up your excellent, reliable postings. I love all of them.

  • Don’t you hate it when you’ve got just a detail or two to work out on a recipe before you can share it? But it’s worth taking the time. So happy to be reminded of these great soups! We’re into serious soup weather, and I need all the inspiration I can get. Thanks!

  • I cannot wait to try these wonderful soups. I scrolled down the page and each one looked better than the previous one. I think I will start with the Lasagna Soup. Thanks for the new soup recipes. I am tired of the ones that I have been making and have been looking for something new.
