My daughter, Cait, served this fabulous, fun dessert last week while we were vacationing in France. We all went crazy over it!
and she promised to share it with you today while I wing my way back to the "good ole USA". Check out the pictures - if you're like me, you'll be pulling out the S'more ingredients and making this yummy treat asap but first, meet the sweetest daughter a mom could EVER have, my Cait:
We've lived in London for two years now and while we really enjoy most things about living here every now and then I really miss a taste of home. And this recipe is just that...a little taste of Americana. I came across a photo of it on Pinterest a few months ago and it immediately went into my "recipes to try" folder. My only problem was that I had no idea where to find marshmallow fluff on this side of the ocean! Or graham crackers for that matter. But, after a bit of looking around, I managed to find the fluff on Amazon and I used Digestive Biscuits instead of graham crackers. The first time I made it I felt as if I was back in Girl Scouts sitting next to a campfire! Delicious!
S'mores Cookie Tart
Ingredients:
½ cup butter, room temperature
¾ cup sugar
1 large egg
1 teaspoon vanilla extract
1 ⅓ cups all-purpose flour
¾ cup graham cracker crumbs (approximately 7 full graham crackers), or digestive biscuits, if you live in the UK - I used 14 digestive biscuits
1 teaspoon baking powder
¼ teaspoon salt
2 super-sized (5 oz.) dark or milk chocolate bars
1 ½ cups marshmallow creme/fluff (not melted marshmallows)
Directions:
1. Preheat oven to 350°F. Grease an 8-inch square baking pan.
2. In a large bowl, cream together butter and sugar until light. Beat in egg and vanilla. In a small bowl, whisk together flour, graham cracker crumbs, baking powder and salt. Add to butter mixture and mix at a low speed until crumbly and just combined. Divide dough in half and press half of dough into an even layer on the bottom of the prepared pan. Place chocolate bars over dough, breaking them up as needed to fit over the dough. Dollop the marshmallow creme over the chocolate layer, then spread gently to cover.
3. Take the remainder of the dough and crumble with a fork to form large clumps. Sprinkle the crumbles evenly over the marshmallow creme. Scatter the mini chocolate chips over the crumble topping.
4. Bake for 30 to 35 minutes, until lightly browned. Cool completely before cutting into bars with a very sharp knife. Sing campfire songs as you eat this yummy treat! 🙂
