A Guest Blogger with a Delicious Arugula Applewood Bacon Frittata

I promised a few guest bloggers while I’m visiting my daughter and her family in London and you’re in for a special treat today while I recover from a bit of jet lag; a guest blog from my wonderful daughter-in-law, Lindsay who is also very talented in the kitchen…………
Thinking of what a great cook Lindsay has become, reminds me of a funny incident that happened many years ago – my son, who was no more than six or seven years old, was going through the typical, sweet, little-boy-stage in which he thought that his mom (me?) could do no wrong………… We were talking one day, when he mentioned that he thought I was the best cook – ever! I thanked him but shared with him that one day he would have to tell that to his wife. He looked up at me and without blinking an eye said very seriously  “Oh mom, my wife will probably be the kind that throws a TV dinner in the oven and calls that a meal!” Well he was definitely WRONG – Lindsay is a fabulous young chef and is here today to share one of her delightful recipes, Arugula Applewood Bacon Frittata. Our breakfast routine during the week is pretty standard fair, normally whatever is fastest and easiest. Saturday mornings are usually when I put in a bit more effort for the first meal of the day. The past several weeks we have been on a frittata kick. You can make them with almost any ingredient in your fridge and they come together in just a few minutes. Plus, there is only one pan to wash when you are done! This particular frittata came together with just a few leftover ingredients from the week- half a bell pepper, some leftover bacon and arugula. I just started throwing things in the skillet and we were pleasantly surprised when we tasted it! We loved it so much I made it again the other night for dinner and served it with a green salad. Another amazing thing about frittatas- they are great for breakfast, lunch or dinner! 


Arugula Applewood Bacon Frittata

Ingredients:
1 tsp olive oil
1/2 cup diced onion
1/2 cup diced red bell pepper
2 tablespoons sun-dried tomatoes
3/4 cup cheese (I used gouda)
1 cup arugula, roughly chopped
6 eggs, beaten
1/4 cup greek yogurt (or milk)
salt and pepper to taste
1 tsp italian seasoning
3 pieces applewood bacon, diced, cooked and drained (leftover cooked bacon works great)

Directions:
1. Preheat oven to 400 degrees.

2. Heat oil in oven safe skillet over medium heat. Saute onions and peppers until they are soft, about five minutes. 
3. Meanwhile, beat eggs and milk in a small bowl, season with salt, pepper and italian seasoning. Stir cheese into the egg mixture, reserving a small amount to sprinkle on top. 
4. Add the sun-dried tomatoes and arugula to the pan and stir. Pour egg mixture into the pan and sprinkle with the bacon and reserved cheese. 
5. Transfer the skillet to the oven and bake until the eggs are firm and top is golden – about 10 minutes.
