Thinking of what a great cook Lindsay has become, reminds me of a funny incident that happened many years ago – my son, who was no more than six or seven years old, was going through the typical, sweet, little-boy-stage in which he thought that his mom (me?) could do no wrong………… We were talking one day, when he mentioned that he thought I was the best cook – ever! I thanked him but shared with him that one day he would have to tell that to his wife. He looked up at me and without blinking an eye said very seriously “Oh mom, my wife will probably be the kind that throws a TV dinner in the oven and calls that a meal!” Well he was definitely WRONG – Lindsay is a fabulous young chef and is here today to share one of her delightful recipes, Arugula Applewood Bacon Frittata. 1 tsp olive oil
1/2 cup diced onion
1/2 cup diced red bell pepper
2 tablespoons sun-dried tomatoes
3/4 cup cheese (I used gouda)
1 cup arugula, roughly chopped
6 eggs, beaten
1/4 cup greek yogurt (or milk)
salt and pepper to taste
1 tsp italian seasoning
3 pieces applewood bacon, diced, cooked and drained (leftover cooked bacon works great)
1. Preheat oven to 400 degrees.
