I love to bake bread. I always have. Now apparently everyone else has decided that it would be a swell idea because it is IMPOSSIBLE to find
YEAST anywhere on the grocery shopping apps. This is really annoying for those of us who bake most of our own bread. I am down to two packets of expired yeast!!! So how do we get a DIY version? Any ideas?

Living in Denver, it's so difficult to properly calibrate the rising of dough. I've gone to bread cooking classes, but dough never rises in the oven which is set at the proper temperatures. Been making bread for years but at sea level. I have made cakes that came out of the oven like cookies!! I see no recipes as to any changes to be made for people who do live at higher altitudes.

I live in Colorado Springs, at a higher altitude than Denver, and have no problems with breads/cakes/dough. Bake my bread with a cloche and all of my cakes in a convection oven. They both turn out fine. For cakes I increase the temps (even though convecs run about 5-10 degrees higher) by about 10 degrees for the first 15 minutes of baking to form a crust to keep i hem from falling and turning into a cookie. There are several websites that are dedicated to high altitude baking and they provide plenty of tips to perfect your skills at your increased altitude and that can be applied to any recipe.

Hi Monica, I live in the mountains of NC but at only 2600 ft so I don't really know about high altitude baking. I think there are some great articles out there though like this one from King Arthur flour: https://www.kingarthurflour.com/learn/resources/high-altitude-baking
