Yes, I have a lovely surprise for you today! My daughter-in-law, Lindsay served us a delicious dessert a few weeks ago - as soon as I took the first bite, I knew I would be begging her to share it with you.................
Mini Coconut Impossible Pies
Ingredients:
1 ¾ cups sugar
4 large eggs
1 stick butter (4 ounces or 113g), melted
½ cup flour
2 cups sweetened shredded coconut
2 cups milk (I used skim)
Directions:
1. Preheat oven to 350 and butter small ramekins or two 9 inch pie plates.
2. In a large bowl, whisk melted butter with the sugar. Add the eggs and beat until smooth. Stir in flour, coconut and milk. Pour mixture into ramekins or pie plates and bake in the oven for about 45 minutes or until golden and firm to the touch.

I am aa sucker for anything coconut. I'm in the LOVE my husband is in the HATE department. I'll have to make this when people come over so I have some one to share them with. Do you know if there's a way to reduce the sugar or use a substitute? If not that's ok. Just curious.

Brilliant!! I'm with you on the coconut. Funny, I didn't like it at all till I turned about 40, then a girlfriend made a coconut cake for my bday and I had to be polite and eat some. It was awesome and I've been a convert ever since!!! Loving the idea of these beauties!!

This is absolutely beautiful, and so easy! I have made the impossible pies before, but all the Bisquick ones,this one looks more elegant and fresh! Maybe now I will like coconut in something other than Hostess Snoballs and Mallo Cups!
