By the time you read this I'll probably have arrived in London - a visit with my daughter and her family who live there. I'll be sharing recipes for the next two weeks from London and Samoens, a small French mountain village where we will be skiing and exploring the French cuisine but I promised this delicious salsa recipe ........... so here we go............
I love to buy local produce and ingredients for cooking but at this time of the year the pickings get a little slim. I don't know about you but I've been seeing some beautiful deep red strawberries at my market lately - they're not anything like the ones that I'll pick this spring at our local pick-your-own farm but they're not bad and tthey definitely have been satisfying my craving for fresh fruit.
I thought it would be fun to make a salsa with these pretty strawberries and some of the other delicious fruit that is available at this time of the year. I had some wonderful sweet navel oranges and a golden pineapple so I got busy. I tried several versions and think I finally came out with a perfect balance of sweet, savory and spicy - the final version includes diced avocado, white onion, red bell pepper, cilantro, jalapeno, lime juice and honey all melded together for a huge YUM!
We loved eating this salsa with tortilla chips and it was fabulous with my Broiled Coconut Shrimp - you'll want to check back as I'll be posting that recipe later this week - it's the perfect dish to add some freshness to these cold winter days!!
Pineapple-Strawberry-Citrus Salsa
Ingredients:
1 cup fresh diced strawberries
2 medium navel oranges, sectioned and diced
1 medium avocado, diced
½ medium white onion, diced
½ medium red bell pepper, diced
1 clove garlic, minced
3 tablespoons fresh lime juice
` tablespoon honey
pinch salt
Directions:
Combine all ingredients until well combined and enjoy with chips or Broiled Coconut Shrimp (recipe later this week).
