It's day three of "Irish Week" here at The Café and we're sharing a delicious appetizer today .............
............... Sesame, Oat & Parmesan Crackers served with a simple, but fabulous Herbed Goat Cheese.
The crackers are quite delicious on their own and while I'd like to say that they're amazingly healthy - they do have whole wheat flour, oats, walnuts and sesame seeds .......... the six tablespoons of butter probably nulls the nutritional status just a bit. I just figure the combination totals up to "nothing lost, nothing gained" right?**
You do have to admit that the ingredient list is infinitely better than most of the crackers you'll find on grocery store shelves, crackers with ingredients like: HYDROGENATED COTTONSEED OIL, SOY LECITHIN (EMULSIFIER), SUGAR, DEXTROSE, CARAMEL COLOR, HIGH FRUCTOSE CORN SYRUP, CORN SYRUP, BHT ADDED TO PACKAGING MATERIAL TO PRESERVE FRESHNESS ........ and on and on it goes!
So............. now that we're clear on that topic, I have to tell you how wonderful these thin, buttery (yes!), crisp discs of deliciousness are ............... well, let's just say they're addictingly delightful! They're great on their own as a snack, with hummus, cheese spreads or any creamy sliced cheese but with a simple log of goat cheese rolled in fresh herbs, they're ........... simply sensational! Give them a try, I know you'll see what I mean!
**Just don't mention this whole business to my sweet friends like Kelly from Inspired Edibles or Frances from Beyond the Peel with healthy, beautiful blogs boasting fresh, innovative recipes and lots of great nutritional information - they might frown on me a bit for this concept! 🙂 But do visit their wonderful blogs, you won't be disappointed!
6 tablespoons butter, softened
1 large egg, beaten
1 cup rolled oats
¼ cup whole wheat flour
1 teaspoon sea salt
2 teaspoons fresh thyme
⅓ cup finely chopped walnuts
½ cup finely grated parmesan cheese
¾ cup sesame seeds
3-4 ounce log of goat cheese
2 tablespoons fresh finely chopped herbs (use whatever you have; I used fresh parsley, rosemary and basil but any combination would be delicious!)Directions:
1. Preheat oven to 350˚F. Line two baking sheets with parchment paper.
2. Beat butter until soft and fluffy. Add egg and beat until combined. Add remaining ingredients except sesame seeds.
3. Break off walnut size pieces and roll into balls, then roll in sesame seeds to evenly coat.
4. Place the balls of dough on the prepared baking sheets, spacing them evenly. Press with the back of a flat-bottomed glass until very thin. I like to use a small piece of parchment paper between the dough and the glass to keep dough from sticking. Sprinkle each flattened disc with more sesame seeds to cover most of the surface.
5. Bake in the preheated oven for 15 minutes or until golden and crisp. Allow to cool for 3-4 minutes on baking sheet then transfer to a wire rack to finish cooling.
6. For the goat cheese, simply roll the log of cheese in the fresh herbs and serve with fresh fruit and the delicious crackers.

I made these, and used almonds instead didn't have any walnuts, my opinion is too much butter, as they were baking i can see butter poring out of the cookies, maybe more flour to add or less butter, i'll try those alternatives next time. Love home made crackers, fresh out of the oven yam!
