It happens every year. I'm quite sure that my esteem will greatly plummet in the eyes of some of you fine folks when you find this out.
I hate to admit this, but it wasn't until yesterday, when I got a phone message from a sweet friend, inviting Scott and I to a Super Bowl get together, that I had any clue the biggest football (it is football, right?) game of the year was coming up this Sunday.
"Holy Schmoly!" I said to Scott. "I've got to get my act together - one of these years"!
So to redeem myself, perhaps a teeny bit, I'm offering some of the most delicious, most fun, most Super-Bowl-party-friendly recipes in my arsenal. I call it the Super Delicious, Super Fun, Super Bowl! If you live outside of the United States, I'm sure that you have all kinds of occasions similar to the Super Bowl which just cry out to gather family and friends together. I hope you'll find something here that strikes your fancy.
And if you can find it in your heart to overlook my knowledge deficit in the sports arena, I'll be sure to make it up to you with lots of fun new Valentines recipes - coming up soon (a day I never loose track of).
Best Ever, Super Easy Salsa - Loaded with delicious South of the Border flavor, this fresh, vibrant salsa comes together in less than 10 minutes. Here are a couple comments I've received from readers:

Try it, just know it will disappear like hotcakes so be sure to have plenty of chips!
Chili Oil Rubbed Flatbread Crackers - these easy to make crackers are shatteringly crisp and amazingly flavorful. The first time I tried something similar at a restaurant I flipped over them. It took a few tries, but I came up with these and it seems that everyone loves them. The DYI chili oil is wonderful on all sorts of things and definitely takes these crackers way over the top!
Rosemary-Roasted Carrot, Garlic and White Bean Dip - If you were wondering what to serve with the Chili Oil Rubbed Flatbread Crackers, I've got you covered although this dip is wonderful with any type of chip or cracker.It's delicious, healthy and unique. Everyone who tries it falls in love with the wonderful flavor and smooth, creamy texture.
Guacamole Hummus - a delicious combination of guacamole and hummus. You'll be making this healthy dip over and over per request! Everyone seems to love it. I like to serve this with the Sesame Crisps pictured above but it would also be quite wonderful with the Chili Oil Rubbed Flatbread Crackers.
Honey Sriracha Peanut Sauce - this one is full of flavor and a healthy alternative to heavy, rich dipping sauces. It's also super versatile and can be used as a drizzling sauce for grilled, roasted or pan-seared poultry, pork or seafood.
Pineapple, Avocado & Fresh Corn Salsa - it'a fresh, vibrant, delicious and super versatile. Perfect for chips or fabulous served with any Mexican entree - quesadillas, tacos, burritos, grilled entrees, etc.

And if you're looking for something a little heartier for your game-day get together, I've included two of our favorites. Both of these can be made ahead.
Beef, Butternut and Bacon Chili - the perfect winter comfort food dish to warm the hearts (and appetites) of all your game watchers! It's heart and healthy!
Rosemary Root beer Slow Cooked Pork - unique and crazy good, this stuff is a real crowd pleaser. Make it ahead of time in your slow cooker and you can just warm it up on game day. The honey-lime slaw is amazing and adds a really nice fresh touch.

Of course you want to have a few sweet treats to nibble on. These are always winners:
Peanut Butter Toffee Crinkle Cookies - they're definitely not your ordinary peanut butter cookie. Nope, these have crisp edges, chewy, toffee centers, deep, crackly crevices and lots of sugary crumbs.
Irish Chocolate Cheesecakes - in a jar! So rich, so decadent, so delightful ... and ... so portable! Make them a day or two in advance. Everyone can just grab a jar and enjoy the game.

Oh, and did you know that, on Super Bowl Day, it's legal to eat dessert before any thing else? I know you were probably thinking that I needed to read "Sports for Dummies". Maybe I taught you something, huh?

I know what you mean about not knowing when the Super Bowl was, we are flying on Sunday but hopefully can find someplace to eat and watch the game after getting to our destination.. I know any of your dishes would be much better than what we will probably end up with. Have fun!

I love all of these recipes but that pineapple avocado salsa, and the regular salsa, okay the cookies too - so many beautiful recipes and beautiful photos! Enjoy your SB party! Oh, Chris, all those choices. Every single recipe, some which I remember and I think I made the salsa, is fantastic as are you and Scott. I had never heard of tethering before. Alas, I have no one to tether with so I have an excuse if my buns are cut wrong and my cabbage is not color-coordinated! I feel very self righteous about Super Bowl Sunday because I have chosen to join a Sierra Club/Audubon Society birding/plant hike here on the Central California coast (where you vacationed last year). I don't even mind missing those Super Bowl commercials. Thank you for the collection of reminders of your many delicious recipes.

I knew that Super Bowl was coming up but I've been away from gridiron football for a long time. It's the soccer Asian Cup and the Australian Open tennis around these parts but the food is the same for all of them. I love this selection!
