Super Simple Olive Oil & Rosemary Flatbread Crackers
Ingredients:
½ cup extra virgin olive oil
1 clove garlic, crushed
1 tablesoons finely chopped fresh rosemary
sea salt
Directions:
1. Place olive oil, garlic and rosemary in a microwave-safe glass measuring cup or container. Cover with plastic wrap and microwave on high for 30 seconds. Remove from microwave and allow to cool while preparing crackers.
2. Break crackers into serving size pieces or with a sharp serrated knife, cut into 2-inch wide strips. Place crackers on foil-lined sheet pans in a single layer.
3. Brush crackers lightly with herb infused olive oil. Sprinkle with the thyme and a generous sprinkle of sea salt. Bake at 350 until beginning to turn golden, about 8-10 minutes. Serve warm or allow to cool. Great with dips, spreads, cheese, hummus or olive oil.
Note:
* ~ Matzo Crackers are actually the unleavened crackers that are part of many Jewish Passover celebrations. They are quite bland and plain-Jane on their own but have a delicious transformation when a bit of olive oil, fresh herbs and sea salt are added!
This recipe will make quite a few crackers - you can give your neighbors a lovely gift or cut the recipe in half if you don't need so many.
