Last Friday I posted a wonderful recipe for Carrot Cake Jam. This unique jam is not only delicious on toast, bagels, muffins, scones, yogurt and oatmeal, but it can be transformed (very quickly!) into a delightful appetizer…………….
I served this yummy Sweet and Savory Goat Cheese Appetizer to some guests over the weekend along with the Whole Grain Bread Crisps from last week; it was quite the hit – not a crumb was leftover! The sweet jam combines beautifully with the savory vinegar, touch of spicy Sriracha and the fresh herbs. The delicious goat cheese spread is the perfect smooth creamy base for this unique spread.
This recipe is quite adaptable for using other flavors of jam, so, if you don’t have the Carrot Cake Jam, (but you do want to try this!) just substitute a nice apricot, peach, cherry, or raspberry jam……………. really, whatever you’re in the mood for! Keep a little log of goat cheese along with some cream cheese in your fridge, a few interesting jars of jam and some good crackers in your pantry and you’ll have fabulous appetizers in record time!
Sweet and Savory Goat Cheese Appetizer
2 ounces goat cheese, softened
4 ounces cream cheese, softened
1 tablespoon sour cream, half and half or whole milk
¼ cup Carrot Cake Jam, or any other kind of jam
2 teaspoons balsamic vinegar
1 teaspoon Sriracha
1 teaspoon finely chopped fresh rosemary or cilantro, plus a bit more for garnish
crackers or Whole Grain Bread Crisps
1. Combine softened goat cheese, cream cheese and sour cream together in a small bowl. Mix with a small whisk or spoon until smooth and creamy. Transfer to a small decorative serving bowl.
2. In a clean bowl, combine jam, balsamic vinegar, Sriracha and fresh herbs. Pour over cream cheese mixture and garnish with a sprinkle of the extra chopped herbs. Serve with crackers or Whole Grain Bread Crisps. ENJOY!
