This is probably one of the easiest recipes I've posted in the thirteen months I've been blogging, but definitely one of the most fun - and delicious! Once you try it, this lovely treat may very well become a staple in your pantry - really, the uses for it are limitless.
Citrus-Ginger Honey - I've been going crazy over this stuff - enjoying it mornings with fresh fruit and Greek yogurt, stirring it in my tea, drizzling it on my Seeded Oat Bread (a fabulous five-minute bread recipe - tomorrow's post), adding it to salad dressings, sauces, glazes. Wait till you see some of the delightful ways to use this simple honey, infused with vibrant ginger and citrus zest! If you need a bit of culinary PIZZAZ in your life, take a few minutes (literally) and whip up a batch of this pure deliciousness.

Citrus-Ginger Honey
Ingredients:
2 cups honey
1-ounce fresh ginger root, peeled
orange zest, from 1 large or two small oranges, finely zested
lemon zest, from 1 large or two small lemons, finely zested
Directions:
1. Slice ginger into thin slices. Stack slices on top of each other and slice into tiny matchstick pieces. Cut across matchstick pieces several times so that ginger slivers are not longer than an inch. Give lemon and orange zest a few chops, if pieces are longer than an inch.
2. Place honey, ginger and zest in a microwave-safe container, that will hold at least 2 quarts. (The honey will bubble up quite furiously and could make a huge mess if your container is too small.) Microwave on high power for 2-½ minutes. Carefully remove from microwave and ladle into clean jars while hot. Allow to cool slightly, clean off tops of jars and cover tightly with lids. Let sit at room temperature for 24 hours to allow flavors to infuse, then refrigerate, freeze and give away!
Ideas for Citrus-Ginger Honey:
~ Delicious on Greek yogurt with fresh fruit
~ Drizzle on buttered toast
~ Stir into tea, hot or iced
~ Combine with a bit of finely chopped jalapeño and fresh basil and spoon over goat cheese, serve with crackers or crostini and fresh fruit for a delicious appetizer.
~ Add a bit of soy sauce and oil and a splash of Sriracha and use as a glaze to brush on chicken, shrimp or pork tenderloin towards the end of grilling.
~ Combine with softened butter and spoon into a pretty dish, serve with fresh rolls or a crisp baguette.
~ Add a spoonful of coconut and drizzle over ice cream - sprinkle with toasted pecans.
~ Use instead of sugar to make a delicious lemonade - heat honey in the microwave for 30 seconds to thin before adding to water and lemon juice so it will easily be incorporated.
~ Use it as a sweet touch in salad dressings - if the recipe calls for sugar or honey, just substitute equal amounts of Citrus-Ginger Honey.
