Tequila Citrus Grilled Chicken

Back to the Tequila Citrus Grilled Chicken -you just can’t go wrong here! You can marinate it for as little as an hour or as long as overnight. The flavors complement the chicken so well – lime, orange, garlic, brown sugar, jalapeño, and of course, a bit of tequila, all working magically together to create an incredibly tasty tender lunch or dinner entreé. I like to pound the chicken to an even thickness which helps it to grill quickly, therefore keeping the meat moist.

I like to use Tequila Citrus Grilled Chicken in a myriad of ways. It’s wonderful served with garlic mashed potatoes and roasted vegetables for a hearty dinner, makes a wonderful sandwich for lunch on Sweet Potato Sandwich Rolls and the leftovers make delicious Pita Pizzas or tasty Grilled Chicken Quesadillas. P.S. I’ll also include the recipe for the Sweet Basil Vinaigrette …………oh, and that yummy grilled bread with melted, marinated, fresh mozzarella – once you taste this, you might just want it for a meal all on it’s own!

Tequila Citrus Grilled Chicken

¼ cup tequila
1 teaspoon lime zest
¼ cup lime juice
¼ cup orange juice
1 teaspoon orange zest
¼ cup extra virgin olive oil
2 teaspoons jalapeno pepper, chopped fine
2 cloves garlic, minced
¼ cup cilantro, finely chopped

1 tablespoon brown sugar
½ teaspoon ground cumin
½ teaspoon salt
¼ teaspoon black pepper
4 medium skinless, boneless chicken breasts, pounded to even thickness

1. Combine all ingredients except the chicken.

2. Place the chicken and the marinade in a zippered bag and marinate for at least 45 minutes or as long as 8 hours.

3. Preheat grill to medium high.

4. Sprinkle chicken lightly with sea salt and freshly ground black pepper. Spray grill grates with grill spray. Grill for about 5-7 minutes per side. Let rest for several minutes, covered with foil before serving. Enjoy!

  • Hi Cindy,
    You certainly could make this without the tequila as the orange and lemon juices combined with the other ingredients will help tenderize the chicken. The tequila does add a delicious flavor though and all of the alcohol is cooked out – I keep a small bottle of tequila around just for this recipe!
