If you've ever made lemon curd, you probably know that it can be quite a chore. Not this recipe! It's the EASIEST Lemon Curd EVER. Be sure to also check out the three mind-blowing things to make with lemon curd also included in this post.
Our youngest granddaughter, Emmy turned 9 this past week. She might just be the epitome of the old adage, "The apple doesn't fall far from the tree" in that she has enjoyed good food from before she even took the first bite. We always smile at the memory of her as a young baby (still solely on breast milk), watching her mom and dad eat, eyeing the food as it went from the plates to their mouths and saying "mmmm, mmmm!".
When she finally was allowed to indulge in solid food, she took all of it in with great gusto! Here is a picture of enjoying a bowl of tomato soup at a ripe young age:
A big decision
Emmy, at 9, is now a bonafide "foodie" and enjoys all types of food... international, sweet, savory and most things in between! She gets especially excited each year when it starts getting close to her March birthday (like in January) and loves thinking and planning what type of cake we will celebrate her big day with.
This year, she asked if she could create a secret Pinterest board to catalog her ideas. Then, about a week ago (since I always have the honor of making her cake) we had a serious discussion to finalize the details.
Emmy's 9th birthday cake choice was "a Pink Lemonade Cake". It was to have a "pink" surprise inside, similar to the interior of this Churro Cake but in pink, lemon curd filling, a lightly lemon flavored buttercream (in pink) and lots of edible flowers in pink and yellow. The cake turned out great and the whole family enjoyed it a few days ago as we celebrated Emmy's big day.
Ridiculously Easy!
The reason I share this story has to do with our Ridiculously Easy Microwave Lemon Curd which was what we used as the filling for Emmy's cake. Although I made the cake itself, Emmy prepared the lemon curd entirely herself a few days before her birthday. It truly is so ridiculously easy that an almost 9-year-old can make it, start to finish!
Making homemade lemon curd can be a complicated process. It usually involves a double boiler, careful watching, stirring and standing over the stovetop. This microwave lemon curd? Not so much! It comes together in about 10 minutes and much of that time is hands-off cooking in the microwave.

What to do with lemon curd
If you don't know what to do with lemon curd, here are a few fabulous suggestions:
- Serve it with English muffins, scones, biscuits, toast...
- It's delicious on pancakes instead of syrup. Offer fresh fruit to pair with it.
- Fold a bit of it into whipped cream to serve with desserts for a heavenly lemon-infused treat.
- Serve it as an ice cream sauce with fresh raspberries or strawberries, delish!
- Swirl a spoonful into Greek yogurt for an amazing breakfast treat.
- Layer it between shortbread cookies for a fabulous confection.
- For a simple but delicious dessert, simply drizzle it over seasonal fresh fruit and sprinkle with a little shower of poppy seeds as pictured below.
Three mind-blowing things to make with lemon curd
Besides all of the above, I wanted to share three lemon curd recipes that will (as the title of this post says) simply blow your mind. This delicious Lemon Curd Mousse is so elegant, yet easy enough to make an ordinary day special. It tastes like a creamy, fluffy lemon cloud with a layer of graham cracker-coconut-pecan crunch on the bottom.
With a buttery, press-in crust and crumb topping (made from the same dough) and an easy lemon curd filling, this heavenly Lemon Curd Shortbread Tart is beyond delicious!
And last but definitely not least, this AMAZING cake:
