Avocado Salsa

Ingredients

  • 3 tablespoons fresh lime juice
  • 2 teaspoons honey
  • teaspoon salt
  • ½ teaspoon cumin
  • 1 medium clove garlic finely minced
  • ½ large white onion
  • 6 medium green spring onions, finely sliced, reserve a teaspoon for garnish
  • ¼ cup finely chopped fresh cilantro reserve a teaspoon for garnish
  • 3 large avocados peeled, cored and diced in ¼ inch pieces*
  • freshly ground black pepper

Instructions

  1. Combine lime juice, honey, salt, cumin and garlic in a medium-size bowl. Whisk to combine.
  2. Add white onion and spring onion. Stir well. Add avocado and cilantro. Stir gently till combined.
  3. Garnish with reserved cilantro, spring onions and freshly ground black pepper.

Recipe Notes

Use a sharp knife to dice avocados for a pretty salsa. You'll get nice clean cuts and they don't get all smushed that way. I've used these Global knives for several years now and love them. They are razor sharp and have a wonderful a really nice "feel" in my hand.
