I've kind of had it with rich, sweet, heavy, high-caloric indulgences. Not that Christmas dinner and all the festivities around the holidays weren't delicious. Oh no, that's not the problem at all.
It's just that, I'm ready to treat my body a little more kindly, and with chilly, wintery weather greeting me each time I head out the door, soup sounds just perfect to me. Healthy, veggie-laden, butter-and-cream-free soups, that is.
I perused through The Café soup archives today, looking for an antidote recipe for our holiday eating overdose. I couldn't decide on one since there's quite a plethora of yummy selections. I picked out six of our favorites and I think they will be the perfect prescription to get us back on track.
Are you there yet? Either way, check out the recipes below. You honestly won't feel like you're missing anything with these Six Healthy, Delicious Winter Soups. With a loaf of warm crusty bread and a simple green salad, they can all be a meal!
Roasted Tomato-Basil Bisque - the most delicious tomato soup ever! And it's made with canned, ROASTED tomatoes - yup, you can roast canned tomatoes!!
Chicken Tortilla Soup - Oh man, this is one of our favorite soups of all time. We gobble up a pot of this in no time flat! But that's okay cause it's super healthy and loaded with good stuff!
Roasted Carrot and Coriander Soup - if you're looking for a soup that everyone will love, this one is a definite crowd-pleaser. The soup bowls always come back empty.
Sweet Potato Coconut Curry Soup - with lots of fresh veggies and coconut milk for creaminess this wonderful soup will become a family favorite; it has at our house!
Curried Parsnip and Apple Soup - with parsnips, potatoes, apples, leeks, shallots, onions, light coconut milk and lots of wonderful herbs and spices this soup is a winner!
Sweet Pea and Potato Soup - I love serving this delicious, hearty soup for lunch with a grilled cheese sandwich on the side, but it also makes a fabulous, fun and quite elegant appetizer soup.

Maybe you're just tired of cooking after all the holiday extravaganza. As much as I love to be in the kitchen sometimes, enough is enough and I'm ready for a break. If that's true for you too or you're just ready to eat a little smarter, whip up a batch (maybe even a double batch) of one or more of these soups and you'll have kitchen-freedom and healthy eating for days. All you'll have to do is a little microwave magic warm up and everyone will be happy as clams.
P.S. I know I said six soups, but I forgot to add the wonderful soup in the first photo. It's called Winter White Velvet Soup. It's super smooth - that's why I call it Velvet Soup - with no cream or milk. Just lots of wonderful veggies like potatoes, parsnips, cauliflower, shallots, leeks, onions... It's a veggie lovers nirvana, but guess what? Even the ones who've tried it that aren't so big on veggies have LOVED it. It's a great way to sneak in all kinds of wonderful nutrition into a meal that everyone will enjoy.

Yes, Chris, I'm there. Definitely thinking about soups, chowders, chilis, anything healthy and steaming hot. When I walked home from seeing a film late last night, it was 6 degrees and going down more. Man, it was cold. Today is cold and snowy. The skiers love it. Me, not so much. Dear Chris, these soup recipes look delicious. The curried parsnip and apple soup is just perfect to use up the last of these vegetables that I grew in Winter. I will be making it for lunch tomorrow, even though it is mid summer. It sounds just the right after all the rich food that I have been eating.. I will save your roasted tomato basil bisque recipe for later when I have a glut of tomatoes and basil later this Summer. Thank you for sharing. Love Rose x
