- Ingredients:
- 2 teaspoons extra virgin olive oil
- 2 teaspoons butter
- 6 cherry tomatoes cut in half
- sea salt and freshly ground black pepper
- 3 large eggs beaten
- ½ cup cream
- 1- ounce goat cheese or Feta Gaye used French Feta, quite yummy!
- fresh herbs; mint oregano, basil, really whatever you have or are in the mood for
Directions:
Combine butter and olive oil in a small sauté pan over medium-low heat until butter is melted. Add tomatoes and cook slowly for about 20 minutes or until most of the liquid from the tomatoes has been absorbed. Sprinkle with sea salt and pepper.
Combine eggs, cream and a pinch of sea salt, whisk to combine. Pour egg mixture over the tomatoes and cook over medium heat until eggs begin to firm up. Sprinkle with cheese and fresh herbs.
Place under broiler for a few minutes until top is lightly browned and eggs are firm. Cut in half, sprinkle with a few more fresh herbs, if desired and serve. Expect rave reviews!
