Honey Lemon Salad Dressing
I call this Honey Lemon Salad Dressing "magical" as it can take even the simplest greens and transform them into a fresh, vibrant, rave-worthy salad!

- 2 tablespoons fresh lemon juice
- 2 tablespoons white wine vinegar
- 2 tablespoons honey
- 2 teaspoons Dijon mustard
- 1 small cloves garlic finely minced
- ½ cup extra virgin olive oil
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
To make in a glass mason-type jar:

For a creamier version of this dressing, combine all of the ingredients except the olive oil in a blender container.
Blend on high for 30 seconds or until well combined.
A the olive oil and blend again, just until the mixture is creamy and well-combined. (It’s best to not blend the olive oil too long as it can take on a bitter taste.)
Transfer the mixture to a glass jar with a tight-fitting lid.
