Ingredients

  • ½ cup light coconut milk
  • 1 cup 0% Greek yogurt I like Fage
  • 2 cups fresh spinach packed
  • 2 medium peaches unpeeled, pitted and halved.
  • 1 cup diced fresh pineapple
  • 1 medium ripe banana the riper, the better
  • 1 teaspoon finely chpped fresh ginger
  • ½ teaspoon coconut extract
  • 2 cups crushed ice

Instructions

  • Starting with the coconut milk (this will make it easier to blend), place all ingredients, except ice, in a blender container. Blend on high for a few minutes until all ingredients are incorporated and mixture is smooth.
  • Add crushed ice and blend for another minute. Pour into tall glasses and enjoy!

Notes

To make things easier in the morning, you could make these the night before. Just omit the ice and refrigerate right in the blender container. In the morning just add ice and you'll be ready to roll!
