- ⅓ cup good-quality mayonnaise like Hellmann’s or Duke’s
- 4 medium ears of fresh corn kernels cut from the cob, no need to cook!
- 1 cup shredded mozzarella cheese
- 1 teaspoon sugar
- 4 green onions thinly sliced
- ¼ cup diced bell pepper red, yellow, or orange
- 2 tablespoons finely chopped fresh basil
- 1 teaspoon garlic salt
- Fresh corn kernels for garnish
- Fresh basil leaves for garnish
Preheat the oven to 400˚F (200˚C). Lightly grease a small oven-safe ceramic dish or cast iron skillet with a bit of oil.
Combine all the ingredients (except the garnishes) in a medium bowl. Stir well until everything is evenly mixed.
Transfer the mixture to the prepared dish and smooth the top.
Bake for 12–18 minutes, or until hot and bubbly around the edges.
For extra color and flavor, broil for 1–2 minutes at the end, just until the top is lightly golden and charred.
Garnish with fresh basil leaves and a sprinkle of fresh corn kernels.
Serve warm with crostini, crackers, or your favorite dippers.

You can assemble this dip up to a day in advance, cover and refrigerate it, then bake it just before serving. Perfect for stress-free entertaining!
If using canned corn for this recipe, I recommend using a 15-ounce can Steam Crisp or Summer Crisp Corn or something similar for the best flavor and texture.
You could also use 1½ cups of sweet tiny kernel frozen corn.
