Ingredients
½cupgolden raisins
1tablespoonwater
4ears fresh cornhusked and lightly steamed. I love this easy method.*
1tablespoonextra virgin olive oil
1clovegarlic
2teaspoonsfinely chopped or grated fresh ginger
1tablespoonfresh lime juice
2medium plum tomatoescored, seeded and diced
½medium white onionpeeled and diced small
3tablespoonsfresh basilfinely chopped
½teaspoonsea salt
Instructions
Place raisins in a microwave-safe bowl. Add water and cover with plastic wrap. Microwave on high for 30 seconds. Remove from microwave and set aside to cool.
Heat olive oil over medium heat in a medium-size, non-stick pan. Add garlic and ginger and cook for 20-30 seconds or until fragrant.
Add corn and cook for 2 minutes, stirring occasionally. Remove from heat and add tomatoes, onion, prepared raisins, lime juice, fresh basil and salt. Stir to combine. Serve warm.
