Not too tired though to come home and make these amazing Candied Balsamic Rosemary Walnuts. The idea for them has been rolling around in my head for a while now. When I saw my daughter's prolific rosemary bush, well, that did it! I cut myself a huge bouquet.

Ingredients

  • 2 teaspoons butter
  • ½ cup sugar
  • 2 tablespoons balsamic vinegar, use the best quality balsamic that you can afford
  • ½ teaspoon kosher salt
  • 1 tablespoon finely chopped fresh rosemary
  • 2 cups walnut halves or pieces
  • flaky sea salt, we love Maldon

Instructions

  1. Preheat oven to 350˚F. Line a sheet pan with foil and spray with cooking spray. Rub foil with a paper towel to cover surface well. Spray lightly again. Set aside. Place an (approximately) 18-inch piece of parchment paper on a heatproof work surface.
  2. Add butter to a large non-stick pan and melt over medium heat. Add sugar, balsamic vinegar and salt. Continue to cook, stirring continuously until sugar is dissolved. This will take 3-4 minutes. Add walnuts and rosemary, stir gently with a heat-proof spatula to coat walnuts with sugar mixture.
  3. Turn out onto prepared pan and place in oven. Bake for 15 minutes (It may take a bit longer), removing from oven and gently stirring every five minutes until nuts are deep golden brown. Remove from oven and immediately turn onto prepared parchment paper. Working quickly, separate nuts with two forks. Sprinkle generously with flaky sea salt. Allow to cool completely. Store in an airtight container.

  1. Hi Chris, - Any chance that you have labels for these? If so could you please send them to me when you have a chance - Many thanks

  2. I love this recipe. I have made exact recipe and also have made omitting rosemary and coating with cinnamon and sugar. Pecans work equally well. Present in a mason jar with a tag tied to the jar with jute as a lovely hostess gift. Add a pretty little leaf shaped bowl for a special hostess at Thanksgiving.

  3. I pinned these months ago, and finally got around to making them. They are fantastic! Can't wait to try more of your recipes.

  4. I made some Rosemary walnuts but I didn't know about the difference between fresh Rosemary and dried Rosemary. I didn't know to triple the amount of Rosemary if fresh than dried. However I prefer the sweet nuts to salty nuts. Is it possible to still add sugar and vinegar combination and change change them to sweet nuts?

  5. Chris, this is another winning recipe - if you were to put these beauties in front of me, there would be no stopping me...goodness, these candied walnuts look impossible to resist!

  6. I love candied pecans and make them often especially during the holidays and for gift giving. I like this recipe with the balsamic added to the mix to give it that extra rich flavor. I'll look forward to trying them.

  7. Chris, I share your love for candied nuts and wish I could indulge! They look absolutely delicious. The fact that you have such a wonderful source for fresh rosemary, well I'm trying not to be envious. I'm so going to try your recipe with granular erthritol. It's always great fun to visit your beautiful café.

  8. OH mine, this would be the most dangerous snack, because I would eat it all. By myself. Without sharing.

  9. Mmm. Oh how I love all your roasted nut recipe Chris. I think I'd have to make a small batch though. Making the whole lot could be dangerous!

  10. Although I am not a fan of walnuts, I'd eat these happily because two of my favorite ingredients make these nuts way flavorful: balsamic vinegar and rosemary. Great recipe, Chris!

  11. I love this. It is always nice to have a few nibbles for company, but I like them sprinkled in a salad also. I love fresh herbs with anything.

  12. I am not going to make this...because..sigh...I just can't stop eating them. Too good to not finish them all at once!

  13. Looks delicious Chris! I saw these on Facebook last night and Love this flavor combination -they would make a lovely hostess gift 😉

  14. These sound terrific. I like the flavor combinations a lot! I'm sure I could eat half of that bowl in one sitting 😉

  15. Rosemary and balsamic vinegar -- what a great combination! I love to make nuts like these. (I stashed some Maldon salt away last winter when I made your rosemary lemon salt for gifts -- delightful.)

  16. They would be delicious all on their own but I can't wait to see hat else you do with them. I can see them in an ice cream.

  17. Yum Chris!!!! I love rosemary on crackers and nuts, it adds such a wonderful savory taste to a dish! Your nuts look fantastic!!! I know I would love a huge batch of them.

  18. Phil would love this, he eats nuts several evenings a week. And walnuts are so good for your health and your heart! I have never heard of the flaky sea salt!!! Now I will have to Google it.

  19. Oh my goodness, fabulous!!! I've been reading so many health benefits of late regarding walnuts, and I'm thinking the best way to use these beauties is simply to eat them out of hand! Lovely shots btw...

  20. I'm pretty sure that if I prepare these I won't be able to stop nimbling on them! In a salade, it would be sooo good!

  21. These look delicious and I can not wait to try them, but I have read the recipe several times and do not see when to add in the finely chopped rosemary. Thanks for any clarification!

    1. I think you teach some cooking classes in Raleigh, I would love know if you are ever offering those again in the future! I live in North Raleigh.

    2. Thanks Malinda, I'm not doing any teaching right now as the blog is pretty time consuming but if I do offer any classes, I would advertise them right here on the blog.

  22. I may not be able to wait until I get out and buy walnuts. I might have to try this with almonds. 😉 (Actually, I love the idea of candied balsamic anything - you're brilliant.)

  23. Oh my Chris - they look pretty fantastic! I also have a very big rosemary bush and have a few walnuts hiding in the freezer - maybe I need these in my life! Hope you get some extra rest tonight. Have a lovely week!
