Strawberry season is just getting started in our little corner of the globe and we've already polished off several large buckets of the crimson berries. I've been testing new berry recipes, one of them a delicious strawberry crumb cake (coming up soon!). But you know that old classic song that says "make new friends but keep the old"? That's what we're doing today... sharing three of our favorite cakes from years gone by. Each one is uniquely delicious, bursting with fresh strawberry flavor and ridiculously easy to make with just one bowl and no mixer necessary!
If it's not strawberry season for you right now, no worries! Although there's nothing like fresh local berries, all of these recipes can be made with grocery-store strawberries. Look for berries that are uniformly red and ones that have a little shine. Healthy, fresh strawberries should also be firm to the touch and have pretty green hulls

The pink velvet cake looks like it would make beautiful cupcakes. Do you have any instructions for that?

Hi Alicia, I haven't made cupcakes with this recipe but I think it would be perfect for that. I would check for doneness after 20 minutes and every few minutes after that.
