My daughter mentioned to me several years ago that she was thinking of starting a blog. A blog? What in the world is a blog? At that time, thought "blog" was one of the dumbest words I had ever heard............... but look at me now!...............
The Café Sucré Farine has been quite and adventure for me considering that last year at this time I didn't know an html from a url from a hole in the wall! I didn't even have a clue as to how to leave a comment on a blog. I've come upon many stumbling blocks and made all kinds of mistakes but all in all it has been an amazing, learning, gratifying journey for a crazy cook who loves to spread the good news that cooking can be fun, and extremely rewarding when you see the pleasure and enjoyment it brings to those you love.
One of the best things about blogging, something I never anticipated, is the fun friendships that I'm developing with people all over the world! It's been such an interesting and eye-opening experience to see that people are blogging from one end of the globe to the other. And not just about food but about ............... well just about everything one might have passion about - art, crafts, photography, coffee, music, fashion, cats, family, nutrition ................... you name it - there's a blog about it and opportunities to get to know the authors abound!
One of the fun friendships I've developed through blogging is with a lovely young lady in Australia named Claire. Claire is getting ready to be married and yet takes the time to share her culinary and other talents on a daily basis. She's sweet, smart and an amazing little cook! I look forward to checking out Claire K Creations each day and when I saw these wonderful cookies she shared last week, I knew it wouldn't be long before I would be looking at the real thing - emerging from my own oven!
Today was a rainy, gray day and when I arrived home this afternoon I set my mixer a-whirring! It didn't take any time to thow these Crackly Chocolate Swirl Cookies together and when I peeked in the oven as the first batch was finishing baking, they looked amazing, all crackly with ribbons of decadent chocolate running through them. I couldn't wait for them to cool a bit and guess what? They're even better than I imagined - buttery, crispy yet a bit chewy - I think "heavenly" is a perfect description! This is definitely a keeper recipe - thanks Claire! I know I will be making them often and each time will think fondly of you!
P.S. The only adaptation that I made was to use mint chocolate chips instead of the dark chocolate. Either way this will be a fabulous recipe to have in your collection!
Claire's Incredible Crackly Chocolate Swirl Cookies
9 tablespoons butter, softened
1 cup sugar
1 teaspoon vanilla extract
1 egg yolk
2 tablespoons milk
2 cups plain flour
½ teaspoon baking powder
1. Preheat the oven to 350˚F and line two sheet pans with parchment paper.
2. Break the chocolate up into a heat-proof bowl and melt it by microwaving it for 20 seconds at a time, stirring after each heating, until it is smooth.
3. With an electric mixer, beat the butter, sugar and vanilla together until smooth and creamy. Add the egg yolk and milk and mix until just combined. Remove the bowl from the mixer and stir in the flour and baking powder until the mixture forms a dough. Make a well in the middle of the dough and pour in the melted chocolate. Cut the chocolate through the dough using a knife just enough to create a marble effect – don’t mix too much.
4. Using a teaspoon of dough at a time, roll the dough into balls (I just used a medium size cookie scoop) and place them on the lined pan at least 2 inches apart. Gently press down the top of each ball.
5. Bake the cookies for 12-15 minutes, or until golden then remove from oven and let them cool on the pan for 10 minutes before transferring them to a wire rack to cool completely. The cookies will keep in an airtight container for up to one week.
