This Maple Pistachio Granola is super crisp, clumpy and full of fabulous flavor. Lightly sweetened with maple syrup, it makes a delicious breakfast or a perfect gift with free printable labels!

I love recipes with a story, and this Maple Pistachio Granola recipe (adapted from The New York Times) comes with such a delightful one. The Times explains that the world-famous restaurant, Eleven Madison Park, located in New York City, has a signature tradition: at the end of the meal, guests are sent home with a small jar of granola "for tomorrow's breakfast".

That thoughtful gesture struck a chord with me, so this summer I began making my own version of the Times granola to share with family and friends after meals at our house. It's been such a hit with everyone who's tried it!

Like the Times recipe, my granola is packed with oats, pistachios, coconut and dried cherries. It's lightly sweetened with brown sugar and maple syrup and has a little kiss of warm spices. And instead of coconut oil, like our other granolas, this one is enriched with a splash of olive oil, which adds a unique layer of flavor.

And my secret ingredient? Two egg whites! Whisking the wet ingredients into the dry ones before combining everything together creates those irresistible, clumpy, crunchy granola clusters that everyone loves.

Let's make it!

Are you ready to put together something delicious that will bring tons of compliments and happy faces around the table? Making this Maple Pistachio Granola couldn't be easier:

  1. Mix the dry ingredients. Combine the oats, coconut, pistachios and pepitas in a large bowl.
  2. Whisk together the wet ingredients. In a separate bowl, stir together olive oil, brown sugar, maple syrup, vanilla and salt.
  3. Combine everything together! Pour the wet mixture over the oats and stir until everything is well-coated.
  4. Bake. Spread the mixture onto a baking sheet and bake for 20 minutes. Stir to redistribute, then bake again until golden and beautiful!
  5. Cool and finish. Allow to cool completely, then stir in the dried cherries.


What to do with this Maple Pistachio Granola

This granola is fabulous for breakfast with yogurt and fresh fruit. A drizzle of honey or a spoonful of raspberry or strawberry jam makes it a really special treat!

Another favorite quick breakfast for us is a slice of hearty whole grain toast topped with peanut butter, a sprinkle of this granola and a drizzle of honey. A gourmet treat in minutes!

If we're taking a hike or bike ride, a bag of this tucked in the basket or backpack makes a fabulous treat to look forward to as well as a quick energy boost!

It also makes a delicious, crunchy topping on ice cream drizzled with caramel or chocolate sauce.

Lastly, but not least, this homemade granola makes a wonderful hostess gift and a delicious treat for friends, neighbors, co-workers, etc.

Café Tips for making this Maple Pistachio Granola

  • If your cherries are a little too dry, it's easy to rehydrate them - place them in a microwave-safe bowl with a few drops of water, cover with plastic wrap and microwave for 45-60 seconds. Cool completely before adding to the granola.
  • I find that this granola keeps its crunch better if stored in a glass jar or container.
  • Make sure to line your sheet pan with parchment paper to keep the granola from sticking. I like these precut parchment paper sheets. They're so convenient and save lots of time.
  • To get those beautiful, crisp clumps, be sure to let the granola cool completely before stirring and storing.
  • If there's a lot of humidity, you may find that your granola loses some of its crispness. No worries! Just preheat the oven to 200˚F, then turn it off. Spread the granola out on a sheet pan and leave it in the oven until it's completely cool again. Voila! Super crisp, crunchy granola!

Ingredients
 
 

For the dried cherries

  • 1 cup dried cherries

For the granola

  • cups rolled oats
  • 1 cup shelled pistachios, I use salted pistachios
  • 1 cup unsweetened shredded coconut, sweetened also works
  • cup pepitas (shelled pumpkin seeds)
  • cup extra virgin olive oil
  • ½ cup maple syrup
  • cup light brown sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cardamom, optional
  • 1 teaspoon kosher salt, maybe a bit more, to taste
  • 2 egg whites, from large eggs

Instructions
 

For the dried cherries:

  1. If your cherries are nice and plump, you can skip this step. If not, place the cherries in a small microwave-safe bowl or cup. Sprinkle with ½ teaspoon of water. Cover the container with plastic wrap and microwave for 45 seconds on high power. Remove from the microwave and set aside to cool.1 cup dried cherries

For the prep:

  1. Preheat the oven to 300˚F. Line a sheet pan with parchment paper. Set aside
  2. For the granola:
  3. In a large bowl, combine the oats, pistachios, coconut and pumpkin seeds.2¾ cups rolled oats, 1 cup shelled pistachios, 1 cup unsweetened shredded coconut, ⅓ cup pepitas (shelled pumpkin seeds),
  4. In a medium bowl, combine the olive oil, maple syrup, brown sugar, cinnamon, cardamom (if using), and salt. Stir well to combine. Add the egg whites, one at a time, whisking vigorously after each addition.⅓ cup extra virgin olive oil, ½ cup maple syrup, ⅓ cup light brown sugar, 1 teaspoon ground cinnamon ,½ teaspoon ground cardamom,1 teaspoon kosher salt, 2 egg whites
  5. Pour the wet ingredients over the dry, making sure to scrape the bowl well. Stir until the oat mixture is well coated. Take a tiny taste and sprinkle with a bit more salt, if needed.
  6. Transfer the granola to the prepared pan and spread to a single layer.
  7. Bake for 20 minutes then stir well to redistribute the mixture. Return to the oven and bake for another 15-25 minutes or until beautifully golden.
  8. Remove from the oven and cool to room temperature before stirring and storing. Add the cherries and mix to distribute.
  9. Store in an airtight container. I like to use glass containers to keep the granola nice and crisp.
