Could I entice you with one of these Goat Cheese Mousse and Smoked Salmon Canapés? With a shatteringly crisp rye cracker base, a silky smooth dollop of lemony goat cheese mousse and a curl of delicious smoked salmon, this lovely little small bite is a fine-restaurant quality appetizer that I whipped up for you at home - in less than 45 minutes!
It's funny how May always sneaks up on me. I find myself reveling in the beautiful change of season all through the month of April and tend to forget that May is loaded with a zillion special "events"...
There's Mother's Day, graduations, weddings, showers, picnics in the park, end-of-school-year events, Memorial Day get-togethers... and on and on it goes, right? And of course, most of these occasions call for food. After all, what's a fun celebration without festive, delicious food?
These make-ahead, Goat Cheese Mousse and Smoked Salmon Canapés will make your life a bit easier, and the "Merry Month of May" a bit merrier (and more sane!). The delicious crackers look fancy but are made simply with deli-sliced rye bread. They can be made up to a week ahead, but if you're pressed for time, a package of nice crackers will easily sub. This light, silky-smooth mousse is made with just three ingredients and takes less than five minutes - and the salmon? It comes all set to go! Put these delightful little bites together at the last minute and expect lots of compliments!
