What a summer it's been here at The Café! After living in the same city, Raleigh, NC, for over 37 years, Scott and I packed up our bags and home earlier this week and moved to the mountains of North Carolina, near Asheville. We're official "mountain people" now, and are totally smitten with this gorgeous little corner of God's creation. Because of the intensity of relocating and preparing for the move, I haven't had much time for cooking and creating new recipes. But my fingers are itching to get back in the kitchen and I've got tons of new ideas. I'll be back in the saddle soon! In the meantime, I thought I share some of our favorite summer salads to inspire you to enjoy the delicious and bountiful supply of seasonal produce.
