Fall has been slow to arrive here in the North Carolina mountains. We had an unusually warm September and early October, but now I see it was well worth the wait. As I gaze out the window, I note clear blue skies and gentle winds that dapple the golden sunlight blanketing our surrounding woods. The cold snap that blew our way earlier this week has transformed the trees to magnificent shades of amber, saffron, crimson and bronze.

Although I've been making soup for weeks in hopes of autumn, it's now truly here. I thought I'd get you in the spirit too, by sharing some of our very favorite soup recipes!
