Scrolling through Instagram can sometimes get me into trouble. You see, the only time I seem to squeeze in a little social media is while I'm walking on the treadmill in the morning. But that defeats the purpose of exercise, because I often get completely enraptured by the endless stream of fabulous recipe videos... case in point: these Magic Cookies.

Magic bars, yes... but cookies?

Yep, a couple of weeks ago, I was diligently trying to get my "steps" in and clicked on Instagram to make things a bit more interesting. That's when I stumbled upon someone making Magic Cookies. Magic Cookies? I'd heard of Magic Bars, but I didn't realize there was a cookie version.

The ingredients were simple: condensed milk, graham crackers, coconut, and chocolate chips. I was a little skeptical that the cookies would taste as good as they looked and were described in the IG video, but I also couldn't wait to try these easy, no-mixer treats.

Don't tell anyone, but I cut my walk just a tiny bit short, dashed downstairs, and started rummaging through the pantry for a bit of inspiration to put my own spin on the recipe (my favorite thing to do!).

A few fun twists

I'm a big believer in the magic of rice cereal (i.e., Rice Krispies) in sweet treats. Just ask anyone who's tried these Coconut Pecan Toffee Cookies, or these Chocolate Chip Cherry Oatmeal Cookies - you'd never guess these cookies contain rice cereal, but it adds lightness and a wonderful little crunch. So I thought it would be fun to make a magic cookie without graham crackers, swapping in crispy rice cereal instead.

And, if you've been hanging out here at The Café for any length of time, you probably know that I love the buttery crunch and caramel-y flavor that toffee bits bring to baked goods. I couldn't resist grabbing a bag of those from my stash, too.

Ridiculously Easy and crazy-delicious!

First, let's discuss the easy part. I know that many recipe sites underestimate the time it takes to make a given recipe. This is NOT an exaggeration when I say that by the time your oven is preheated, your "dough" will be ready to bake. Here are the directions: "Combine all ingredients in a bowl and stir until everything is thoroughly mixed." That's it! See what I mean? Easy... ridiculously easy!

While we're talking about "ridiculously easy," let me take a minute to share that we actually have an extensive collection of recipes titled "Ridiculously Easy". And crazy-delicious? Well, I think the term explains itself, but let's just say that Scott and I both just rolled our eyes in delight with the first amazing bite. Your shopping list

As I said, the ingredient list is short for these Magic Cookies. You'll need:

  • Condensed (not evaporated) milk • You'll need one can per batch.
  • Rice cereal • Either Rice Krispies or a generic brand will work.
  • Toffee Bits • These are available in the chocolate chip section of most larger grocery stores.
  • Coconut • I use unsweetened, but sweetened will also work.
  • Chocolate Chips • Your favorite variety - I use semi-sweet.
  • Pecans • You can chop them fine yourself or purchase finely chopped pecans, sometimes labeled as "Pecan Chips".

I hope I've convinced you to whip up a batch of these fabulous, magic bar-inspired cookies. Oh, and speaking of gifts, we left plates of these cookies in several of our neighbors' mailboxes along our little mountain road and sent a quick text to let them know a treat was waiting.

Just a few minutes later, one neighbor replied:

"We immediately took a bite and it is seriously so delicious!!"

Another texted later:

"Thank you so much! The cookies are stupendous!"

Living in the mountains, however, can be a little… well, let's just say, unpredictable. The next text wasn't quite as cheerful:

"Chris, I'm so sorry to say that my mailbox was open, the mail was on the ground, and no treats!! And I saw a bear on the way up the road. So there is now one happy bear 🙃"

See what I mean? EVERYONE loves these cookies - even our local wildlife!

Café Tips for making these Magic Cookies

  • I share this in the recipe, but I want to emphasize that, because of the condensed milk, these cookies will spread a bit in the oven.

  • But, no worries! After the cookies bake for 10 minutes, simply remove the pan from the oven and use a small plastic spatula to shape them into perfect circles. Then finish baking for another 5 minutes.

  • This is a sticky dough, so it's important to line your sheetpan/cookie sheet with parchment paper and give it a light spray with non-stick spray (or drizzle it lightly with oil, then spread with a paper towel).
  • If you're in the market for sheet pans, I love these OXO Good Grip pans. They're sturdy and hold up well (under the abuse of a food blogger).
  • I'm also a big fan of these pre-cut parchment paper sheets, the perfect size for sheet pans.
  • For a pretty presentation, add a few extra chocolate chips as the cookies emerge from the oven.
  • I also like to sprinkle the cookies with a bit of flaky sea salt at this point as a nice balance to the sweetness.
  • Stored in an airtight container, these cookies will stay fresh for a week to 10 days.
  • We love to pop them in the microwave for 8-10 seconds for that fresh-from-the-oven melty deliciousness!

Ingredients
 
 

  • 3 cups rice cereal, I use Rice Krispies but a generic brand will also work
  • 1 cup chopped pecans, I like to use "pecan chips" which you can purchase at most larger grocery stores in the baking aisle
  • 1 cup toffee bits⁣, I use Heath Bits of Brickle
  • 1 cup shredded unsweetened coconut, I have used sweetened also
  • ¾ cup semi sweet chocolate chips⁣
  • 14 ounces sweetened condensed milk, 1 14-ounce can (397g)
  • extra chocolate chips, for garnish, if desired
  • flaky sea salt, for garnish, if desired (I love Maldon flaky sea salt)

Instructions
 

For the prep:

  1. Preheat the oven to 350˚F. Line 2 sheet pan with parchment paper. Spray the parchment lightly with non-stick spray and rub with a small piece of paper toweling to coat entire surface.

For the cookie dough:

  1. In a LARGE bowl, mix together all of the ingredients until everything is well coate with the condensed milk. At first it will look a little dry. Just keep stirring until everything is nicely coated.3 cups rice cereal, 1 cup chopped pecans, 1 cup toffee bits⁣, 1 cup shredded unsweetened coconut, ¾ cup semi sweet chocolate chips⁣, 14 ounces sweetened condensed milk

To bake:

  1. Bake the cookies for 10 minutes. Remove the pan from the oven and use a silicone spatula to reshape the cookies into nice round circles. Return to the oven for another 5-6 minutes or until golden brown.
  2. You can reshape them just a bit again at this point, if desired. I like to add a few extra chocolate chips and a sprinkle of flaky sea salt at this time for a pretty presentation.extra chocolate chips, flaky sea salt
  3. Allow the cookies to cool on the parchment lined baking sheet for 10 minutes then transfer to a wire cooling rack to cool completely.
  4. Don't try to stack the cookies until they are completely cool and the chocolate chips have firmed up. Store in an airtight container.

Notes

    • If you want to make these cookies gluten-free, you'll need to use a gluten-free rice cereal.
    • I share this in the recipe, but I want to emphasize that, due to the condensed milk, these cookies will spread slightly in the oven.

    1. Hi Cat, coconut is a binding ingredient in these cookies. I haven't tried it but oatmeal might work similarly..

  2. These look incredible but my family has both pecan and coconut haters. It’s two cups if ingredients to potentially replace, is that too much and I need to just find another recipe?     1. Hi Mary, we haven't tried them without coconut but I think you could try subbing oatmeal for the coconut.

    1. Hi Cait, I haven’t tried the cookies with graham crackers. I think it would work fine but without testing it, I can’t say for sure.

  6. Little confused about the actual baking time! In the title of the recipe, it mentions a "Cook Time" of 30 minutes, but then the cookies only seem to be in the oven for about 15/6 minutes. Is this correct?
    PS. love all your recipes!!!

    1. Hi Linda, sorry if that is confusing. The cookies do take 15 minutes to bake, but you’ll need to bake two separate pansof them so that’s where the 30 minutes comes in.

    I’m in desperate need of your expert suggestions! I made your Ridiculously easy magic cookies but didn’t add the pecan bits as they are going to be a welcome-to-the-neighborhood for my new neighbors and didn’t know if anyone is allergic to nuts so I added some Kraft caramel bits.
    They taste yummy but too chewy and it might be because of the caramel bits? Plus my scoop was not large enough so they turned out small and a little overdone.
    I’m off to buy a larger scoop and more ingredients so I can come home and make another batch for my new neighbors.
    Is there anything else I could add to them to make up the extra cup—maybe more coconut, Rice Krispies, etc.
    I appreciate any help you can give me.

    1. Hi Susan, yes, I think it probably was the caramels that made them too chewy. But you could add another type of nut or more rice crispies, and even a little more coconut would be OK. Hope that helps!

  11. I have these mixed up and sitting in the bowl. I can't find what the recommended amount of 'dough' for each cookie is?! I'm sure the size might influence bake time! Help!

    1. Hi Barbara,
      I use a medium-size cookie scoop, which is 2 ounces, but I've made them in different sizes. The time can vary a bit, but not much. Look for a pretty golden color and you'll be good. No matter what size you make them, pull them out at the 10-minute mark to reshape, then bake a little longer (about 4-6 minutes) or until golden. ENJOY!
