These Maple-Glazed Roasted Almonds are sweet, salty, crunchy and just plain addictingly delicious. They're perfect for snacking, cheese and charcuterie boards, salads... and so much more!

We've been enjoying these Maple-Glazed Roasted Almonds non-stop for the past few weeks. They make a great snack when you need some protein to keep you going between meals. We also love them for breakfast, sprinkled on Greek yogurt paired with fresh fruit and a drizzle of honey. And on cheese trays, charcuterie boards or sprinkled on a salad these guys will take things from ordinary to extraordinarily delicious!

Easy peasy

I love that these Maple-Glazed Roasted Almonds look fancy but come together with minimal effort. How does it work?

Here are the easy steps:

  1. Preheat the oven to 300˚F. Line a sheet pan with parchment paper.
  2. Combine maple syrup, butter, salt and almonds in a microwave-safe bowl.
  3. Microwave on high power for 2 minutes, then stir.
  4. Return to the microwave and cook for another minute. Stir again.
  5. Repeat step 3 two more times.
  6. Turn the almond mixture out onto the prepared pan and roast for 10 minutes.
  7. Stir to redistribute, then return to the oven and roast for 10 more minutes.
  8. Turn the oven off, but leave the almonds in place to cool.
  9. Try to control yourself and save some of these delicious, sweet and salty treats for the others.

Combined with the maple syrup, salt and a knob of butter, a pinch of both cinnamon and curry powder takes these nuts to a fabulous new level. And don't worry if you're not a curry fan, it's only a quarter teaspoon that no one will detect. Everyone will detect deliciousness, for sure!

Cafe Tips for making these Maple-Glazed Roasted Almonds

  • Almonds can be expensive, but I've found that when purchased in bulk at big box stores like Sam's Club or Costco, they're super reasonable.
  • Make sure you don't stir the nuts after the final 10-minute stint in the oven or during the cooling process, as they will lose their pretty shiny glaze.
  • Allow the almonds to cool completely in the oven, then transfer to an airtight, glass container. The slow cooling in the oven makes them super crunchy and keeps them from getting sticky.
  • I've found that it's best to store these almonds in glass jars or other airtight glass containers. When stored in plastic,c they can get sticky if the weather is humid. I like these glass jars when giving the almonds as gifts.
  • Don't skip the cinnamon and curry powder! It's a fairly small pinch of each, but these two little additions add a unique, delicious flavor in combination with the maple syrup, butter and salt.
  • My microwave is 950 watts and does not have a turntable. You may need to adjust the microwave time for this recipe according to your microwave. The goal is to have most of the syrup/butter mixture absorbed before you put the almonds into the oven.

Ingredients
 
 

  • 2 cups whole almonds
  • 3 tablespoons pure maple syrup
  • 2 tablespoons butter, I use salted butter
  • ½-¾ teaspoon kosher salt
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon curry powder

Instructions
 

For the prep:

  1. Preheat the oven to 300˚F. Line a sheet pan with parchment paper. Set aside.

For the roasted almonds:

  1. Combine the almonds, maple syrup, butter, ½ teaspoon of kosher salt, cinnamon and curry in a medium-large microwave-safe bowl. Microwave on high power for 2 minutes. Remove from the microwave and stir well to coat the almonds. Carefully remove 1 or 2 almonds and taste. Add a pinch more salt, if desired.
  2. Microwave for 1 minute, then stir. Repeat this 3 times for a total of 4 additional minutes in the microwave.
  3. Turn the almonds out onto the prepared sheet pan and spread to an even layer across the surface of the pan.
  4. Bake in the preheated oven for 10 minutes then remove from the oven and stir to redistribute the almonds, again spreading them across the pan to an even layer.
  5. Bake for another 10 minutes. Do not stir this time. Just turn the oven off and let the pan with the nuts remain inside until the oven is completely cool. I usually let them sit overnight.
  6. Remove the pan from the oven and transfer the nuts to an airtight glass jar or container.

To store:

  1. These nuts will keep well in an airtight glass jar for several weeks. (I've found that they don't keep as well stored in plastic containers or ziplock bags.)

    1. Hi Claudette, you can skip the curry, although it does add a wonderful layer of flavor, but these nuts will still be delicious without it. A pinch of cumin could add a similar touch of flavor or an equal amount of ground coriander would also be nice.

    1. Hi Peg, I think you could make them in a pan on the stovetop and then transfer to the oven. I haven't tried that so I can't give you exact times.

    I just made the maple-glazed almonds and unfortunately they were very greasy after they had cooled. I checked my measurements and they were fine. Do you have any idea what I did wrong.

    1. Hi Bonnie, I'm so sorry you had trouble with this recipe. It's hard to determine without being right there in the kitchen with you. It may be that they didn't bake long enough or it could be the type of butter. I would set them out on several thicknesses of paper towels to absorb that extra grease. Hope that helps!

  19. OMG - ADDICTIVE! I've made these several times already for my family and as gifts. OUTSTANDING!!! Because I was making them so often I decided to try doubling the recipe. They didn't come out quite as shiny and glazed. Still a little wet after coming out of the oven. Should I have doubled the time ? Still one of my favorite recipes.       Regarding your question, if you want to double the recipe, it would be best to use two sheet pans. They need to be spread out a bit on the pan and with double the amount, they're just too close. You can roast them in two pans on two middle racks in the oven, then switch the position of the pans half way through.

    1. Hi Timothy, you will not know there is curry powder in here. It just imparts a bit of warmth. But you could just skip it or add a pinch of chili powder for a different flavor profile.
