They all use this amazing little trick for making biscuits and scones from the super-smart folks over at Cook's Illustrated. They somehow figured out that if you chilled buttermilk in the freezer for a short stint then added melted butter to the cold buttermilk, it would create little "globules" of butter (see the pic below) suspended in the liquid.

When added to the dry ingredients (flour, leavening agents, sugar and salt), the same little pockets of butter would appear. This technique works perfectly for biscuits and scones.

The PTA at my son's elementary school hosts breakfast once a month for the teachers. I always sign up for scones. The night before I make a double batch and put them into the fridge on sheet pans. In the morning, I bake them and deliver them to school. Yesterday when I walked in with the platter full of scones, someone said, "Oh, I know that platter! Good things come on that platter!"

I would love to make the scones and was wondering if you have a break down of the calorie/fat/cholesterol etc. We are 0n a fitness journey but would like to bake a batch and freeze for the...only one...on a lazy Saturday or Sunday morning before church.
