Slow Cooker Indonesian Shredded Barbecue Chicken

Ingredients
 
 

  • 2 ½ pounds skinless, boneless chicken thighs
  • kosher salt
  • freshly ground black pepper
  • For the sauce:
  • ¾ cup honey
  • ½ cup good quality ketchup
  • ½ cup low sodium soy sauce
  • 2 tablespoons hoisin sauce
  • 3 tablespoon finely chopped fresh ginger
  • 2 tablespoon finely chopped fresh lemongrass
  • 1-2 teaspoons sriracha chili sauce*

Instructions
 

  1. Sprinkle chicken lightly with kosher salt and freshly ground black pepper. Place in KitchenAid your slow cooker.
  2. In a bowl, mix the honey, catsup, soy sauce, hoisin sauce, ginger, lemongrass and Sriracha sauce. Stir well to combine.
  3. Pour sauce over the chicken. Cover, and cook 2 to 3 hours on High or 4-5 hours on Low or until chicken is tender and shreds easily with a fork.
  4. Remove chicken from sauce and set aside to cool.
  5. Increase the temperature on your slow cooker to high and cook for 10 minutes or until sauce is beginning to thicken. You can also transfer the sauce to a medium-size saucepan and simmer it on the stovetop.
  6. Shred chicken with two forks into bite size pieces. Return to the slow cooker and stir to coat with sauce.
  7. Serve on buns, over rice, in wraps, paninis or on pizza.

    1. Hello Mary,

      Sorry for the confusion. There is garlic in both the hoisin sauce and the sriracha sauce so you don’t have to use more. That being said, I like to add 2 cloves of minced garlic to this sauce along with the other ingredients.

  3. Question about cooking times! I will have to use a normal crockpot for this recipe, and I'm a little worried about the instruction to cook the chicken for 4-5 hours on low. When I cook chicken breasts on low in my crockpot, I usually put them in for 6-7 hours (because that's what every recipe I've encountered says to do). Does the multi-cooker run hot or is it normal to cook thighs for a shorter amount of time?

    1. Elle, I think the cooking times should be about the same. That said, every slow cooker is a little different (kind of like microwaves), so you may just have to watch yours carefully the first time.

  6. Justing seeing your indonesian bbq chicken makes my mouth water. I love slow cooking because it allows me to leave it while doing other chores. After some time, you have such a delicious meal. In the case of your bbq chicken - with all its yummy goodness (judging by how it looks) - I don't think I can wait for it to be done.

    1. There you go Jennifer! Until I got the KitchenAid, my old one spent more of it's time in the storage pantry than in the kitchen!

  8. I like a different spin on the same old crock pot chicken-- intrigued by the addition of lemon grass. We love making Thai chicken soup with lemon grass. I will definitely try this crock pot version.
