Green Goddess Dressing, Dip and Drizzle Sauce
This delicious Green Goddess Dressing will pizzazz up so many things from salads to entrées. Use it as a dressing, as a dip or a fabulous drizzle for chicken, steak, pork, shrimp... anything!

- ½ cup Greek yogurt
- ½ cup mayonnaise
- ¼ cup fresh lemon juice
- 2 tablespoons white wine vinegar
- ½ cup 1 ounce or 30g finely grated parmesan cheese, I like Parmesan Reggiano
- ¼ cup neutral flavored oil
- 1 teaspoon anchovy paste
- ½ teaspoon Worcestershire sauce
- 3 medium cloves garlic
- 2 cups baby spinach leaves packed
- 1 cup Italian or curly parsley leaves and delicate stems loosely packed (don't include the lower tough stems)
- 1 cup fresh basil leaves loosely packed
- 1 cup fresh cilantro leaves loosely packed
- 3 tablespoons chopped chives or the green tops of scallions green onion
- 3 tablespoons chopped fresh dill or mint optional
- ½ teaspoon kosher salt
- ½ teaspoon freshly ground pepper
Combine the Greek yogurt, mayo, lemon juice, white wine vinegar, Parmesan, oil, garlic and anchovy paste in a blender container. Blend until nice and smooth, 1-2 minutes.
Add the spinach, herbs and kosher salt. Blend again until smooth and bright green. The color will deepen as the herbs are blended. (How long to blend will depend on the strength of your blender.)
Transfer the mixture to a glass jar or storage container. Stir in the pepper.
Store in the refrigerator when not in use. This dressing keeps well for 4-5 days in an airtight container.
