Green Goddess Dressing, Dip and Drizzle Sauce

This delicious Green Goddess Dressing will pizzazz up so many things from salads to entrées. Use it as a dressing, as a dip or a fabulous drizzle for chicken, steak, pork, shrimp... anything!

This delicious Green Goddess Dressing will pizzazz up so many things from salads to entrées. Use it as a dressing, a a dip or a fabulous drizzle for chicken, steak, pork, shrimp...

A while back, I came across a Green Goddess Dressing on the NYT Cooking site. It had lots of great reviews so I gave it a try. I've been tweaking it a bit here and there ever since. Although my version has some of the same ingredients, it's morphed into something quite different with lots more herbs, more fresh spinach, less mayo and a scoop of delicious parmesan. Everyone we've served it to has commented on the fabulous flavor.

We're drizzling it, dipping it and/or spooning it on everything!

We've had so much fun discovering new ways to use this Green Goddess Dressing. A drizzle of it will transform an everyday salad from ho-hum to vibrantly delicious - but there's so much more you can do with it- here are a few ideas:

  • For a fresh, healthy appetizer that everyone will love, serve it as a dip surrounded by a variety of fresh, beautiful veggies. Add a handful of fresh edible flowers and you've got a masterpiece worthy of an art museum!

  • We love it drizzled over grilled or pan-seared chicken breasts.
  • It's also great on steak, shrimp and pork.
  • Try spooning it over roasted veggies for a bright, beautiful layer of fresh flavor.
  • Serve it in a small bowl with a log of goat cheese and crisp crostini for a delicious appetizer.
  • It's delicious on baked potatoes!
  • Serve it as a spread for sandwiches, quesadillas, burgers or paninis.
  • Drizzle it on roasted or grilled corn on the cob.
  • Use it as a fresh, herby dressing for pasta salad.
  • Use it as a dip for appetizer meatballs.
  • Use it as a delicious cocktail sauce for poached shrimp.

What's in this Green Goddess Dressing?

Fresh herbs are a common denominator in Green Goddess Dressing. This one contains fresh parsley, basil, cilantro, chives (or scallions) and an optional handful of dill (or mint). In addition to all the herbs, there's a nice portion of fresh spinach. The spinach not only enhances the vibrant color of the dressing but also gives it an additional boost of nutrition. Spinach is loaded with beneficial vitamins and minerals!

Besides fresh herbs and spinach, the ingredient list for this dressing includes olive oil,  lemon juice, white wine vinegar, scoops of both Greek yogurt and mayonnaise and fresh garlic. For a fabulous umami, there's also a squeeze of anchovy paste, a small drizzle of Worcestershire sauce and (a little unusual for Green Goddess) a generous portion of grated Parmesan cheese. Put them all together and you've got one super delicious dressing/dip/drizzling sauce!

Easy peasy!

Once you collect all the ingredients, this Green Goddess Dressing takes minutes to put together. Simply throw all the ingredients in a blender container and whiz, whiz, whiz till it's smooth, creamy and vibrantly beautiful!

Fabulous flavor!

What does this Green Goddess Dressing taste like? I call this an herb-kissed, spinach-loaded cousin to a good Caesar dressing with lots of lemon, garlic and delicious umami flavor. Give it a try! Hope you enjoy it as much as we have!

Cafe Tips for Making This Green Goddess Dressing

  • The herbs in the recipe can be mixed and matched. I like to always include the parsley but, if you don't care for cilantro, sub extra basil. If it's summer and you have lots of dill, add a little extra. If you love the flavor of fresh mint, throw in a double dose and skip the dill. It's super versatile!
  • Don't skip the anchovy paste! I don't like anchovies on my pizza or anyplace else! But I always keep a tube of anchovy paste in my refrigerator because, just a squeeze, adds fabulous flavor (and no fishiness!) You'll find anchovy paste at most grocery stores in the same section as the canned tuna and chicken. You can also find it online.
  • There are a lot of herbs and a lot of spinach in this recipe. You may have to stop your blender a few times and use a spatula to push everything down until things can really blend well.

Ingredients
 
 

  • ½ cup Greek yogurt
  • ½ cup mayonnaise
  • ÂĽ cup fresh lemon juice
  • 2 tablespoons white wine vinegar
  • ½ cup 1 ounce or 30g finely grated parmesan cheese, I like Parmesan Reggiano
  • ÂĽ cup neutral flavored oil
  • 1 teaspoon anchovy paste
  • ½ teaspoon Worcestershire sauce
  • 3 medium cloves garlic
  • 2 cups baby spinach leaves, packed
  • 1 cup Italian or curly parsley leaves and delicate stems, loosely packed (don't include the lower tough stems)
  • 1 cup fresh basil leaves, loosely packed
  • 1 cup fresh cilantro leaves, loosely packed
  • 3 tablespoons chopped chives or the green tops of scallions, green onion
  • 3 tablespoons chopped fresh dill or mint, optional
  • ½ teaspoon kosher salt
  • ½ teaspoon freshly ground pepper

Instructions
 

  1. Combine the Greek yogurt, mayo, lemon juice, white wine vinegar, Parmesan, oil, garlic and anchovy paste in a blender container. Blend until nice and smooth, 1-2 minutes.
  2. Add the spinach, herbs and kosher salt. Blend again until smooth and bright green. The color will deepen as the herbs are blended. (How long to blend will depend on the strength of your blender.)
  3. Transfer the mixture to a glass jar or storage container. Stir in the pepper.
  4. Store in the refrigerator when not in use. This dressing keeps well for 4-5 days in an airtight container.
