This soup is a delicious and super healthy way to celebrate asparagus season!

Spring has sprung here in North Carolina, in all it's glory, and it almost takes my breath away each time I venture out. I find myself intoxicated by the sight of dogwoods, ornamental cherries, daffodils, tulips and flowering jasmine, all in full bloom along with budding trees in every hue of green imaginable. The birds seem to sing brighter and more cheerfully these days as the magical cycle of nature once again bursts forth...

It's funny, but all of this beauty and fresh life outdoors always seems to inspire me, in a culinary sense as well. Come the end of March, I'm ready to eat lighter and leaner and am thrilled to embrace the wonderful fresh produce this time of year brings with it. I hope you'll be coming with me, as I've got lots of delicious inspiration for the weeks ahead as this beautiful season unfurls.

I've had fun creating this delicious Asparagus and Shrimp Coconut Curry Soup. It meets all the parameters for a perfect spring dish - light, lean, healthy, pretty and of course, delicious. As the name implies, the soup features asparagus, which to me, is one of the heralds of the spring season. I love that it's light, but filling at the same time.

There's been an abundance of asparagus at my local grocery stores and the price has been so reasonable I haven't been able to resist scooping up bunches of it with great abandon. It took a few tries to get this soup just right, but I've served it several times lately, always with rave reviews.

I mentioned that this soup is healthy. Honestly, that is an understatement. The picture above gives a hint of all the verdant, fresh and delicious ingredients that it's loaded with. The funny thing is that, despite the gorgeous green color, the ingredients combine so well that no one has been able to guess the individual components. You may be surprised yourself, but you'll have to take a little trip to get the details as well as the recipe.

  5. I think this could be my favorite soup of all time, Chris. Asparagus and shrimp are such a perfect partnership and it would never occur to me to make them into a soup! Add coconut, curry and lime? Well, it just doesn't get any better. Your pictures are spectacular and I'm completely crushing on this recipe!

  6. Spring is early here this year but we still get a chilly day or two here and there. Even the robins have starting singing which is wonderful to hear. You can't say spring time better than asparagus soup topped with shrimp!

  10. Spring in NC is always my favorite time of the year there and sadly we'll be missing it this year. The colors in your soup are gorgeous and I love the pansy on top. Beautiful presentation. Our pansies are probably still blooming from when we planted them in October before we left. Makes me kinda sad not to see them this year...

    1. It really frees you up to blend anywhere in your kitchen. I always hated being connected to the wall power. Kind of like being on a dog leash!

    1. White asparagus is so delicious, isn't it Angie? We first had it when we went to visit our daughter during her time in Germany as a foreign exchange student! We fell in love with it!
