Here's to hoping all our friends in the U.S. are having a wonderful Thanksgiving holiday weekend with family and friends, and those of you in other areas of the globe are enjoying a lovely break from the business of the week.

Today, we're sharing just a sneak peek of Monday's post; a fabulous, flavorful and very nutritious soup that will give you a jump start on this busy season, yet offers a wonderful way to use up that extra turkey from Thanksgiving - Turkey Tortilla Soup.................. you didn't cook a turkey this year? .............. or perhaps your guests devoured every last morsel at the holiday feast? ................. no worries! This soup will also be delicious with chicken. You'll want to have a batch of this in your freezer for hectic days during the holiday rush and for unexpected guests.
