Biscoff Toffee Cookies - crisp outer edges and chewy centers combined with the delicious Biscoff flavor and buttery, caramely toffee bits. Oh my!

The recipe makes a ton of cookies (I got 5 dozen medium size cookies), so it'd be perfect for a summer picnic or neighborhood celebration. They'll fly off the platter like hot cakes and you'll hear comments like: "Who made those crinkly crackly cookies?" and "Have you tried these fabulous cookies?" floating through the air. You might want to make some extra copies of the recipe!
P.S. You can find Biscoff in the peanut butter section at many larger grocers. I also purchase it at my local Super Walmart and it's available online. You'll find Bits of Brickle (the toffee bits) in the chocolate chip section of the market. Again, it's available at Super Walmart.

- 3 cups all purpose flour
- 1 ½ teaspoons baking soda
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 cup cup granulated sugar
- ½ cup packed brown sugar
- 1 cup Biscoff Spread
- ½ cup shortening
- ½ cup butter softened
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 1 8 ounce bag Bits of Brickle
-
Preheat oven to 350˚F. Line 2 sheet pans with parchment paper.
-
Combine flour, baking soda, baking powder and salt in a medium size bowl and set aside.
-
In the bowl of an electric mixer combine granulated sugar, brown sugar, Biscoff, shortening and butter and mix until fluffy. Add egg and vanilla and beat until well combined.
-
Add flour mixture and beat just until ingredients are incorporated. Add toffee bits, mix until combined.
-
Scoop up dough and roll into 1 to 1 1½-inch balls. Roll balls in turnbinado (raw) sugar to coat.
-
Place dough balls on prepared sheet pans, about 2 inches apart. Bake 12 to 14 minutes or until medium golden brown. Cool 5 minutes; then transfer to wiring cooling rack. Store in an airtight container when completely cool or freeze until ready to use. Thaw before serving.

I happened across this recipe and made the cookies yesterday. The flavors are perfectly balanced and the cookies look exactly as pictured. Crispy edges, soft centers, and the turbinado sugar lends a wonderful, gentle crunch. I was not aware of Biscoff butter and it truly is a treat. Thank you for posting this great recipe!

Yay! Thanks so much, Jaydee, for sharing your results. I had forgotten about these cookies!

Thanks Aislinn! I don't know what it is about Biscoff, but that flavor is so great!

Stupid question - should the butter be softened?

Love Biscoff and I love toffee, these cookies look fantastic!
It is amazing what ends up in my cart sometimes....I go for just veggies and fruit, and come home with chocolate and sugar 🙂

I'd never heard of Biscoff but found it easily at Publix. Made these last night. They were easy and looked just like the photo. I can't quite describe the taste of Biscoff yet, but the cookies were delicious. I especially liked the little crunch of Bits'O Brickle. (Know I'm know not supposed to eat raw dough, but it was yummy, too.)

I'm so glad you liked these and found the Biscoff. It is hard to describe the flavor but I assure you, once you try it, it won't be the last time, for sure!

Can you believe that I haven't tasted Biscoff or cookie butter yet? But no worries, my family is coming from the States this weekend, and I've asked them to bring me a jar of Trader Joe's Speculoos or Biscoff! I need to compare which one is better, hehehe! Making Biscoff cookies is such a great idea!

I think this is the stuff that Trader Joes calls Cookie Butter, and I NEED to try it! These cookies look delicious. Oh, and most stuff jumps in my cart when my husband comes to the store with me 🙂

I think Biscoff spread should come with a warning on the label! It is definitely addictive! I am just as happy with it on a spoon as I am baking with it. Baking with it is better because then I can give the cookies away. 🙂 These look wonderful, Chris, and have my favorite chewy crunchy texture. Though not all of Trader Joe's products hit the mark (their Biscoff imitation cookies are yucky in my opinion) their cookie butter tastes and bakes almost exactly like Biscoff. Also, for the international readers who can't get toffee bits or Biscoff butter: toffee bits are very easy to make (I do it all the time due to tree nut allergies), and cookie butter can be made combining ground Biscoff cookies with butter (I learned this from a French blogging friend).

I need to pick up another jar of Biscoff spread--then I can make these yummy cookies!!!

I would not mind at all if a jar of Biscoff jumped in my shopping cart and brought a few of his friends along for the ride, like Bits of Brickle! Delicious looking cookies Chris;-) Have a wonderful weekend!

These sound wonderful! The pictures are so perfect too 🙂
GLENDA CHILDERS says
Trader Joes has a cookie spread, as well. It probably won't have that same flavor. Is it molasses that makes them so good? I have been on plane, munching those delicious cookies and wondered what is in them. 🙂
I want to go grocery shopping with you,Chris.
Fondly,
Glenda
Chris Scheuer says
Glenda, I forgot to mention the TJ cookies butter but I think it would be just as good. Most of the replica recipes for Biscoff cookies don't have molasses just lots of wonderful spices but I'm not sure what the real deal is 🙂 So you like my magical shopping cart? I'll try to slip one for you in my luggage next time I visit Chicago!
