The salads look spectacular and delicious your Mexican corn and Bean salad I have made many times it’s a staple salad in our Kitchen. I love the idea of the Caprese with fresh green beans and that will be the next one I make this week. I’m so happy your Farmers Market opened ours will be opening on July 2. At first they said no farmers Markets this year and I was sad. Then when making my trip to Aldis to buy more mangoes I saw the sign and was thrilled. I can always count on flavorful beautiful salads entrees and delicious treats with the Café!!!! Always something delicious to look forward too read and try. I’m grateful the tomatoe Salad looks so appealing I love the colors!!!!
Thanks so much, Danielle! I'm happy you will at least get to enjoy your farmer's market for part of the summer. Ours is very different this year, with the booths spaced far apart and markers for social distancing. Everyone has to have a mask, the number of customers is limited and there is hand sanitizer at the entry and exit. But at least, it's open!
