This Ridiculously Easy, Fresh Strawberry Coulis pairs deliciously with yogurt, ice cream, cheesecake, chocolate, panna cotta and so much more! It comes together in less than 15 minutes and can be stored in the refrigerator or freezer. On top of all that, there are free printable labels for gifts!

My "go-to" for a dessert sauce for the past few years has been our super easy Raspberry Coulis. It's a perfect sauce to garnish all sorts of desserts and is fabulous for breakfast drizzled over yogurt and topped with our Double Almond Granola. But I thought it would be nice to have another option so when I found some beautiful local strawberries recently, it didn't take long to come up with this Ridiculously Easy Strawberry Coulis.

Super versatile

In addition to being adaptable for so many uses, I love that this Strawberry Coulis can be made on the stovetop or, even easier, in the microwave. It can be stored in the refrigerator or in the freezer. And because of the freezer option, you can enjoy it all year long! See what I mean? Super versatile!

Another way to preserve strawberry season

When fresh strawberry season rolls around, I'm all about making jam. The season is sweet, but way too short, so it's nice to have a way to make it enjoyable all year long. You might laugh, but I'm so "all about it" that we have 5 unique strawberry jam/jelly recipes in the Café archives.

The recipes go from classic Strawberry Freezer Jam to Strawberry Jelly, Strawberry Balsamic Black Pepper Jelly, Strawberry Habanero Pepper Jelly, Strawberry Jalapeño Jam and even a Strawberry Raspberry Lemongrass Jam.

What to do with this Ridiculously Easy Strawberry Coulis

Although we mentioned a few things to to with this strawberry coulis, let's check out some others:

  • It's fabulous with any type of chocolate dessert like this Swedish Sticky Chocolate Cake.

  • Serve it drizzled over fresh fruit for a delicious healthy dessert option.
  • Drizzle it over oatmeal topped with fresh blueberries.
  • Serve it with pound cake or Bundt cake.
  • Swirl it into yogurt for a fresh strawberry-flavored breakfast option.
  • Spoon it over these Ridiculously Easy Chocolate Pots de Crème.

Cafe Tips for making this Ridiculously Easy Strawberry Coulis

  • The color and flavor of this Fresh Strawberry coulis will depend on the quality of your strawberries. Look for fresh local berries or store-bought strawberries that are deep red and nicely ripened.
  • The coulis will get thicker as it cools. If it's too thick after it has cooled, you can add a bit of water.
  • The amount of sugar you'll need for this recipe can vary a bit, depending on the sweetness of your berries. I like to start with a cup and add a little more, if needed. If your berries are super sweet to start with, you could initially go with less and adjust as needed.
  • This coulis can be stored for 3-5 days in the refrigerator or 6-9 months in the freezer.
  • It's not necessary but I like to strain my coulis through a fine-mesh strainer when it's done for a super smooth sauce.

Ingredients
 
 

  • 2 quarts fresh strawberries, hulled and sliced
  • 1 cup granulated sugar, maybe more
  • 2 tablespoons fresh lemon juice

Instructions
 

To make in the microwave:

  1. Combine berries, sugar and lemon juice in a large, microwave-safe bowl. Stir well to combine.
  2. Cook on high power for 1 minute. Remove from the microwave and stir again.
  3. Repeat the 1 minute in the microwave followed by a good stir 3 more times. The berries should have released a lot of their juice by this time.
  4. Transfer the mixture to a blender or food processor container and blend for 1 minute on high. Taste and add more sugar and/or lemon juice, if needed.
  5. For a super smooth sauce, strain the coulis through a fine mesh strainer into a clean bowl.
  6. Chill for at least 3-4 hours in the refrigerator. (The sauce will get thicker as it cools.) Serve and enjoy!

  2. Heat over medium-high heat, stirring frequently, until the mixture comes to a simmer. Simmer for 4-5 minutes, stirring frequently or until the berries have released a lot of their juices.
  3. Transfer the mixture to a blender or food processor container and blend for 1 minute on high. Taste and add more sugar and/or lemon juice, if needed.
  4. For a super smooth sauce, strain the coulis through a fine mesh strainer into a clean bowl.
  5. Chill for at least 3-4 hours in the refrigerator. (The sauce will get thicker as it cools.) Serve and enjoy!
  6. The coulis will last for 3-5 days in the refrigerator and for 6-9 months in the freezer.

  1. I made this Strawberry Coulis--strained--specifically for my husband, who doesn't eat strawberries because he doesn't like all the tiny seeds. My only modification was to add a pinch of salt (I blame my mom's rule, "A pinch of salt makes everything better"). The first batch was a major success, and since then we've made another batch, frozen it, and sent some to his mother in Summerville, SC.
    Two weeks ago, when he brought home a basket of local peaches, I used the same recipe, same simple ingredients, and none of it has made it as far as the freezer or my mother-in-law. Thanks for a great recipe! (Going to try some ice cream with it soon!)

    1. Hi Sheila, there may be a way to use the solids but I haven't tried that. I do strain and push on the solids till there's not much left.

  26. The recipe says 32 servings. How much is a serving? 2 T? 1/4 cup? 1/2 cup? It would be helpful for knowing how many cups the recipe actually makes to know whether to make the full recipe, half, doubled, etc. Thank you!

    1. Hi Laurie, if you check in the recipe card under NUTRITION, you'll see that each serving is 2 tablespoons.

    1. Hi Gay, frozen strawberries have so much more liquid, the sauce will be a lot thinner so you may need to cook it longer. Sadly, if you cook it longer, you will lose some of the vibrant color but it will still be delicious.

Also, a question about this recipe. Do I need special freezer jars for making the freezer version, so the glass jars don’t break from expansion? I remember, as a child, my mom always used special freezer jars, but I’m not sure they even make those anymore? Cannot thank you enough for that fabulous Quinoa Pecan Brittle. We ate it all before we could box it up and add the ribbon and label, for our neighbor recovering from extensive foot/ankle surgery. But, we’re going to try again, and see if he gets some this time!

    1. Hi Carlos, we are happy to send the labels. We always use glass jars for the freezer version. If you leave a little space at the top of the jar it gives it room to expand and we've never had a problem. Enjoy!
