Although it's often thought of as quite dreary, I love this time of the year for lots of different reasons. One, it's a time to hunker down inside and enjoy homey things that aren't as appealing when the weather's warm and the enticing call to be outdoors can't be ignored. I also enjoy gazing out the window at the monotone gray woods surrounding us, knowing that it's a resting time for the plants and trees to rejuvenate and prepare for the amazing transformation that will soon take place, every day bringing glorious Spring twenty-four hours closer.
And, since I can't go too long without thinking about all things culinary, I love that this is the time of year to make and enjoy soup! We have TONS of soup recipes in our archives but today we're focusing on three delicious, healthy green soups that will tantalize your taste buds while helping boost your immune system simultaneously!

Healthy, delicious and vibrantly green, this fabulous Ballymaloe Fresh Spinach Soup recipes comes from an Irish cooking (they say "cookery") school that I attended several years ago It's super creamy (with no cream) comes together in less than an hour and has been bringing rave review at their restaurant (Ballymaloe House) for over 50 years!

Incredibly delicious and chocked full of healthy veggies, this vibrantly green Thai Broccoli Spinach Soup comes together quickly and can be served as a side or a complete meal in a bowl! We could have this for lunch or dinner every day and not tire of it!

A delicious take on an old classic, ham and split pea soup, this Ham and Fresh Pea Soup is healthy, vibrantly hued and is loaded with fabulous, flavor! The recipe includes lots tiny frozen peas and fresh spinach for a boatload of great nutrition and a vibrant green color! It's great with leftover ham but you can also just pick up a chunk at the deli.

Please give my very sincere good wishes to your Scott for a quick recovery. I too had my knee replaced in 2017… I like to call it my second VERY BEST…..YESSS! I was bone on bone and not able to enjoy life as our God meant it to be… the knee replacement gave me my life back… I am blessed beyond deserving…. Oh…. MY first VERY BEST YESSSS! To my husband when he proposed…. As I said…. I have been blessed beyond deserving….
