Are you looking for a little winter project to brighten up these cold afternoons? Jams and jellies are just the thing! These recipes celebrate the best of the season's citrus, and some call for dried fruit or frozen berries. But there's a major twist: these recipes require minimal hands-on time, and no canning skills are needed (although some of them can be preserved with a hot water bath, if that's your preference).

Because these can all be stored in the refrigerator or freezer (for longer storage), you can skip the boiling water baths and heavy equipment.
