I taught a recipe development class this past week and was it ever fun! The best part of the class, for sure, was the students. They were smart, cooperative and a barrel of laughs.

Our granddaughters, who are visiting the States from London, were having an overnight at Grammy and Papa's house. It was a hot, North Carolina, August day, just perfect for the icy cold watermelon I had stashed away in the fridge. I pulled it out and threw together a slushie with a beautiful pinkish-coral hue. They loved it, even the one who thought she didn't like watermelon!

We thought it would be a perfect summery drink to share on the blog .......... however there was a slight problem. I had just thrown it together on the spur of the moment and hadn't measured anything. They offered to help me make it again but this time we would carefully measure. We were all set up for a lesson in recipe development.

While they were having a reading/rest time I got everything ready. I cut up watermelon and pulled out the blender along with fresh limes and sugar. Papa was ready with his camera and the girls were soon seated at the island ready for their cooking adventure.

It's a super simple, super refreshing recipe. I'll let the pictures tell the story of  it how it came into being ..........

Watermelon Slushies

Only three ingredients. The most refreshing drink you'll have all summer!
Prep Time 3 hours 18 minutes
Cook Time 3 hours 18 minutes

Ingredients
  

  • 8 cups diced watermelon, cut in about 1-inch pieces
  • ¼ cup fresh lime juice
  • ¼ cup sugar, more or less to taste

Instructions
 

  1. Combine watermelon, fresh lime juice and 3 tablespoons sugar in a blender container. Blend on medium speed until smooth. Taste and add more sugar as needed.
  2. Pour approximately half of the slushy mixture into a 8x8 or 9x9-inch pan and place in the freezer for 1-2 hours or until lightly frozen. It should break easily into big chunks. If you leave it in the freezer longer, allow to thaw slightly before proceeding. Keep the rest of the mixture in the blender container, cover and place in refrigerator.
  3. Break up frozen slushie mixture with a fork. Remove blender container from the refrigerator and add the frozen chunks. Blend on medium till thick and smooth. Serve immediately.

  5. The girls are just adorable Chris. I can't believe how big they are! The other kids back in London must all be so jealous of this 'Grammy' they surely hear so much about. Wait til they tell their friends about their recipe development class!

  8. MMMMM! What a delicious-looking pretty drink, prepared by adorable children and their Grammy! I can't wait until my only granddaughter is old enough to play in the kitchen with me! She's only two, but I'm sure she would enjoy a glass of this with her Momo and Papa. Her little brother is too young yet at 2 months, but I'll be ready when he is! We love our local Florida-grown melons!

    PS I made a grilled chicken salad on greens etc..and your Sesame etc dressing was lovely with it last night.
