We've had lots of chilly days here in North Carolina but for the most part, it's been a pretty mild winter. If we have a string of cold days, there are usually several in the near forecast that will climb up into the 60's or even 70's. Nevertheless, I'm so looking forward to spring, not just for the warmer weather but for glorious unfurling of God's magical metamorphosis - tiny buds appearing on seemingly lifeless branches, vibrant green shoots popping up from a barren earth, entire trees blanketed in soft pink blossoms... new life, here, there and everywhere!
It seems every year around this time, as I anticipate spring and all the delicious bounty it also brings, I start craving salads with bright, fresh ingredients. It's almost like they tide me over until the season does finally arrive.
